Baked Eggs
So excited for you to try these baked eggs! Such a simple breakfast recipe for one. I have tried my hand at a low-sodium dish that I call Roasted Red Pepper Parmesan Baked Eggs. I wanted to use bold flavors to flavor my recipe instead of salt. This was the first recipe that I have made that I didn’t use an ounce of salt. So proud of myself, lol,! I have to say, that these baked eggs are fantastic! I highly recommend them for any breakfast.

Ingredients Needed
- 3 tablespoons finely chopped roasted red peppers
- 2 eggs
- 1 teaspoon freshly grated Parmesan Cheese
How To Make Baked Eggs
- Preheat oven to 350 degrees F.
- Place chopped roasted red peppers into the bottom of a small individual size baking dish. Top with cracked eggs then sprinkle with Parmesan Cheese. Bake for 15 minutes or until eggs are set.
Other Varieties
- Try adding your favorite sautéed vegetables to your eggs, top with different shredded cheeses too! I like to add some hot sauce and have a side of toast for dipping. Great with shredded rotisserie chicken as well.

I want to makeover stir fries. I love them so much, but the salt content in (most) soy sauce puts me off of the entire thing!
I absolutely love parmesan cheese on anything! Will have to try it on eggs sometime maybe add some prosciutto too!
