Tuscan House Italian Grilled 10 Minute Chicken, Honey Glazed Carrots and Garlic Seasoned Green Beans

Good Thursday morning everyone. I swear my kids have an internal radar to know when I get up early to do something. Most times, including today, I’ll just sit my booty down at the computer at 6am mind you, thinking I have plenty of time to do a little work and then I’ll hear those cute little, up WAY too early, footsteps coming down the hall. They can just sense it somehow! So, today is no exception. They are both sitting on my bed staring at me, telling me they are hungry, thirsty, want to play on the computer and so forth……so I’ll have to be quick here!

I made this dinner Tuesday night before I was off to teach Pilates, knowing it would be quick and fantastic. I didn’t plan on taking pictures, but it was really beautiful and full of flavor so I thought I’d share. I always appreciate the simple things in life and this dinner is just that.

 

I have always loved sweet glazed carrots, they are the perfect side to any dish in my opinion. And there’s just something about green beans. I remember eating them all the time as a kid, so I still use the canned green beans my mom would use, not prideful about it at all. When you’re in a pinch they are great! However, next time I’m at the farmer’s market, I’m going to pick up some fresh ones and make something special.

 

Well, we’ve got a busy day of swim lessons and basketball camp so I’m off, but have a nice and hot weekend everyone! I’ll be back soon with another incredible stuffed brownie I took to a birthday party last night.

Tuscan House Italian Grilled 10 Minute Chicken

4 boneless skinless chicken breasts, pounded to an even thickness
½ Cup Kraft’s Tuscan House Italian salad dressing/marinade (It’s a new flavor, really good)
Salt and pepper

1. Using a meat mallet, pound chicken to an even thickness. Preheat indoor grill pan over medium heat on the stovetop. Spray with cooking spray, season chicken with pinches of salt and pepper, and grill chicken 4-5 minutes per side or until cooked through. While grilling, brush Tuscan House Italian Dressing over both sides. Remove from grill, place on a plate and cover lightly with foil to rest until serving.

Honey Glazed Carrots

2 Tablespoons extra virgin olive oil
2 Tablespoons butter
4 Cups thinly sliced and peeled carrots
Salt and pepper
2 Tablespoons honey

1. Heat oil and butter in a large skillet over medium heat. Add carrots, a pinch of salt, pepper and the honey. Stir and let cook for 10-12 minutes, or until softened to your liking. Transfer to a serving bowl and serve.

Garlic Seasoned Green Beans

2 cans green beans, drained

pinch of salt, pepper and garlic salt

1. Combine all ingredients in a saucepan over medium low heat unil warm and ready to serve.

Ingredients

For the Grilled Chicken

    I’m new to your blog and I must say, the photos are beautiful. I have a couple of questions though…

    1st: Do you drain the green beans first, or do you keep the juice when you heat them up with the seasonings? (I love canned green beans, but always eat ’em plain!)

    2nd: How in the heck do you EAT all this UNBELIEVABLE food and stay in such great shape?????!!!!!!!????????

    I’m a pretty good cook and my favorite food is Chocolate Chip Cookies, but man, is that (and having a baby) taking a toll on my body!

    we eat that chicken with the dressing ALL the time, it is really hard to beat and SOOOO easy! looks great. cooked green beans are some of my favorite, and the carrots look yummy too. looks and sounds extremely easy!

    Great way to get the kids to eat a healthy dinner. Who cares where the green beans came from if it tastes good. My sister loves those bird’s eye frozen ones, and I have to admit they are pretty close to fresh. Although her kids still prefer the canned, so what can you do?

    When you are having trouble with knowing when your chicken is done, I’d recommend investing in a meat thermometer. They will let you know when your chicken is cooked through. I like to pound my chicken somewhat thin so I don’t have to cook it as long, it works nicely. Best of luck. I will admit it took me a while before I felt confident about my chicken and even then, I messed it up at the National Chicken competition! Go figure!

    how do you know when your chicken is cooked through? do you start it straight from the fridge? or let it come to room temp? i can never seem to get it right! it is either too done and dry or nice and moist and raw tasting! help!

    I use the Tuscan House dressing all the time. It’s a great quick marinade. Canned green beans are always in my pantry. I use them for everything including quick salads.

    Your pictures of your food are really good. The pictures look so good that they make me want to eat cooked carrots and I don’t even LIKE cooked carrots.
    I am new to this whole photography thing and I’m finding that food is really hard to photograph well. But I keep trying.
