Sharing our favorite simple banana bread recipe today! My S’mores Banana Bread could not be more delicious and so simple to prepare.
Simple Banana Bread Recipe
This banana bread is dangerous I have to warn you. It’s got marshmallow bits throughout the batter with chocolate and graham cracker stuffed right in the middle. It’s sweet and irresistible. It’s whipped up in one bowl too, so you won’t be making a mess of the whole kitchen. Woohoo! Enjoy friends!

How To Make Best Ever Banana Bread
- Preheat oven to 350 degrees F. and spray a 9x3x5 inch loaf pan generously with non stick cooking spray.
- Place butter into a large mixing bowl and stir in sugar until well combined. Add egg, bananas and sour cream mixing until well combined. Stir in flour, baking soda, baking powder, salt and marshmallow bits until combined. Pour half of the batter into prepared loaf pan. Layer with graham crackers then Hershey Bars. Top with remaining banana bread batter spreading evenly then bake for 50-55 minutes or until baked through. Let cool for 30 minutes then remove from pan and let cool completely. Cut into slices and serve! Garnish top of bread with additional marshmallow bits if desired.
Stir until creamy, a good 60 seconds with the spoon.
Add your egg then give a good stir.
Add those mashed bananas.
Tips For The Best Banana Bread
- Bananas that you use for your banana bread should be overly ripe, lots of black on peel.
- To store ripe bananas: freeze with or without the peel. Return to room temperature before baking.
- Use oil over butter. Oil emulsifies and coats the flour, preventing it from absorbing too much water which results in dry banana bread.
- Carefully fold dry and wet ingredients together for a tender crumb.
Add your dry ingredients.
Add some Marshmallow Bits.
You should actually add your sour cream after the bananas, but I remembered it at the end, lol! It all still bakes fine 🙂
Pour half of the batter into a greased loaf pan.
Break out a couple sheets of grahams.
Layer them flat like so.
Perhaps my favorite part of the recipe 🙂
Yes!!
Layer the chocolate over the graham.
Like so 🙂
Pour the remaining batter over top and you are ready to bake!
Mmmm! Enjoy.

How do you think it would turn out if I chopped up the chocolate into small chunks, broke up the crackers into smaller pieces, and mixed it into the batter with the marshmallows? I want to make this, but not sure if I want a surprise in the middle or all mixed throughout!
Thanks again for all your wonderful recipes!
I’d say give it a try Jamie!! I don’t see why it wouldn’t turn out just fine.
