Baked Chicken and Rice
With back to school in full swing, I am all about simple dinners at our house. Between homework and sports starting back up….and a new baby I need dinner to be made simple. This casserole has basic pantry items that you are likely to have on hand at any given time. Full of flavor, be prepared to have a dinner the whole family is going to love!

How To Make Baked Chicken and Rice
- Preheat oven to 350 degrees F. and cook 2 cups dry rice according to package directions.
- Heat oil in large dutch oven over medium heat. Saute onions, cooking and stirring for 5 minutes, until tender. Add garlic and cook for 1 minute. Add rice, salt and pepper, stirring to combine. Stir in vegetables, pasta sauce, Parmesan, and shredded chicken. Transfer to 9×13 baking dish spreading evenly. Top with Swiss cheese and bake for 20 minutes, until cheese is melted and hot.
Add your cooked rice and give a good stir.
Season with some fabulous kosher salt.
Add some freshly ground black pepper.
Chicken time!
Parmesan cheese please.
Some mixed veggies.
Marinara or pasta sauce.
Give her a good mix, taste and season more if desired.
Transfer to a lovely baking dish.
Top with some Swiss Cheese slices. You can top with any cheese really, mozzarella would also be great.
Swiss N’ Chicken Vegetable Marinara Rice Bake
Ingredients
- 2 cups brown or white rice
- 2 large chicken breasts cooked and shredded
- 1/4 cup extra virgin olive oil
- 1 large onion finely diced
- 3 cloves minced garlic
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups frozen mixed vegetables
- 26 ounce jar marinara or pasta sauce
- 1/4 cup Parmesan Cheese
- 8 slices Swiss cheese

Oh yeah, I would totally do mozzarella on this!

YUM! I love that this uses Swiss cheese. It’s probably my favorite, even though I love all cheesy goodness. Swiss is definitely an underused cheese. 🙂
