Lemon poppyseed is one of my favorite combinations. Seems to always be a sweet and delicious cake of some sort. I decided to turn that combination into one delicious blondie if I might say so myself. It’s dense, chewy and lemon poppyseed delicious. Dust with a little powdered sugar and you’ve got yourself a beautiful dessert to serve to family and friends. Enjoy!

How To Make Blondies

  1. Preheat oven to 350 degrees F. and line an 8×8 inch baking dish with parchment paper.
  2. Put butter into a microwave safe bowl and microwave for 30-45 seconds until butter is melted and hot. Add 3/4 cup white chips and let sit for 1 minute. Stir until smooth, if needed place back in microwave for an additional 15-30 seconds to melt through.
  3. Add flour, sugar, chips, baking powder and salt into mixing bowl with melted chocolate. Stir to combine. Stir in eggs and lemon curd and poppyseeds. Stir until well combined. Transfer to prepared baking dish, spreading evenly. Bake for 30-35 minutes, until cooked through. Let cool completely then cut into squares. Serve warm, room temperature or chilled.

Let it sit for a minute or so to melt chips then give a little stir.

Place your flour, sugar, baking powder, salt and 2 eggs. Add poppyseed, lemon curd and more white chips 🙂

Tips For Making The BEST Blondies

  1. Melt butter and add brown sugar while the butter is still warm. Make sure to cool this mixture.  Let other ingredients, particularly eggs, come up to room temperature before you add them. You don’t want to add your eggs to hot butter and sugar or you’ll risk scrambling the eggs. Don’t overmix blondies; mix by hand instead of mixer for best results.

    1. Maria, just make it yourself it is very easy!! I’m from Germany too and just discovered lemon curd last year – it is very unique in flavor and totally worth trying!
      You basically just need lemon juice, eggs, butter and sugar. I have a recipe on my blog if you’re looking for one. 🙂

    These look great and I would love to try them but I seems to always have a problem when a recipe calls for melting white chocolate chips. They either never melt or they bind up into a hard mess. Do you have any tricks and/or a specific brand you use that will melt easily? Thanks so much!

    These turned out fantastically! And, I don’t think mine were completely cooked all the way. I cooked them at 350 for 40 minutes, and they came out like a gooey brownie, which didn’t bother me, but also didn’t look like your picture. The best part was the bottom and edges of the squares, as they had turned into crunchy, chewy, lemony, pieces of perfection. Thanks for the recipe! I will definitely repeat it again, and this time I may even bake it until it looks much like your picture.
