You Can Trust a Skinny Cook Cookbook Giveaway! 3 Winners :)

Thank you for entering. The contest is now closed and the winners have been notified 🙂

What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Wait until you flip through the pages of Allison’s book, she’s witty, funny and the photos are enough to make you want to make each and every one of her recipes! No kidding, I forgot that her recipes are healthy. Take a look at Amazon.com where you can get your own copy if you don’t want to gamble with the giveaway 🙂

Our family loves turkey burgers sprinkled with Herbs de Provence and topped with sauteed mushrooms and garlic, and a slice of lowfat mozarella. I use sugar free, whole wheat buns – they’re more moist than regular white buns and way yummier, too! Serve with a side of oven roasted sweet potato fries, and you’re good to go!

It depends on the season. Right now we love all things tomato and zucchini from the garden. I’d have to say grilled chicken brushetta.

A grilled barbecue rubbed pork chop, and whatever vegetables I can find at my farmer’s market on the side.

My favorite healthy meal to prepare for my family is grilled or broiled chicken salads. It’s so easy to make and so tasty! Every Monday is grilled chicken salads for us!

Salads and sugarless desserts. Our meals are small because fruits and vegetable is plentiful. We snack on them throughout the day and have one sit-down meal a day. We are, by no means, skinny; we’re healthier than most our age.

Quinoa Summer Salad with spring onions and cherry tomatoes and feta cheese. It’s so light and perfect for summer and the bursts of flavor from the spring onions and tomatoes are awesome! 🙂

I’m from the heart of Mississippi, so we love fried food! I LOVE to make faux fried chicken baked in the oven! Everyone loves it!

I make my own yogurt and granola bars…they taste WAY better than store bought and I know what’s in them!

We don’t eat fish very often, so I enjoy anytime we eat fish… Our favorite are grilled salmon steaks or salmon burgers with salad and some veggies.

During this time of year I like to grab fresh vegetables from our (not so big) garden and whip up a quick side dish with beans, squash, cukes, tomatoes, etc. Yum.

My favorite healthy meal for my family is anything with baked chicken breasts. Just by popping them in the oven with a bit of olive oil, salt, and pepper, they always comes out juicy and delicious, perfect for soups, salads, or any other quick fix.

I will just use last night’s meal because it’s ONE of my faves: chicken on the grill, smashed sweet potatoes with a small dab of butter, and broccoli.
