What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..

Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

    Thanks for such a great giveaway – if I don’t win I’ll definitely check out her cookbook on Amazon. Currently my favorite healthy recipe to make that’s a HUGE hit with my family is Broccoli Rabe with White Beans – the recipe is from Sara Foster’s Casual Cooking. PS. LOVE the title of this cookbook!

    I generally try and make any meal a little healthier by using whole grains, lean meat, and adding lots of veggies! I think my favorite healthy meal is probably crock pot Mexican stuffed peppers. I slow cook chicken, add crushed tomatoes and Rotel, black beans, corn, peppers, whatever I find… and then some brown rice and bake it in a bell pepper with some mexican shredded cheese on top.

    My go-to meal is often a soup and salad combo, which can as easy as tossing some veggies together, and opening a jar of soup. On the other hand, it can be made into a beautiful homemade meal by making the the soup from scratch, and adding some special ingredients to the salad, such as goat cheese stuffed figs, or maple roasted sweet potatoes. It’s versatility is probably why it’s my default meal!

    My favorite healthy meal is chili lime tilapia, roasted asparagus, brown rice,and salad with berries,lettuces,slivered almonds, and berry vinegarette dressing.

    My healthy meal would be ground chicken picadillo in a tomato sauce with a lot of fresh herbs and spices over brown rice or white rice with a refreshing green salad topped with extra virgin olive oil and lime.

    Herein lies the reason I need this cookbook. I can’t think of any recipes I make that are all that good for you!! I cook fatty, carby foods!!

    I do have a recipe from P-dub for her beef/snowpeas/bellpeppers that is super delicious and I think relatively healthy for you (low-sodium soy sauce!)
