What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..
Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

My favorite healthy meal that I cook for my family is garlic chicken quinoa. It is so delicious and packed with red and yellow peppers, chopped onions, chicken, and quinoa that is cooked in vegetable broth. So good and so easy!

I love “surprising” my family with desserts that are (somewhat) healthy, vegan, and gluten free! It’s always great to see them wanting seconds, and then explaining that those brownies are full of fibrous beans. 😉
I absolutely LOVE the honey mustard pretzel coated chicken fingers found in HungryGirl 1-2-3. They are moist, salty, sweet, and crunchy all rolled into 1!!

I love making protein pancakes with 1/2 cup of Quaker oats, cottage cheese, & egg whites blended in a blender and then fried like normal pancakes. 28 grams of protein per serving and delish!
Any type of meat with grilled veggies is my favorite healthy meal!

My husband and I make Mediterranean wraps with whole wheat tortillas, hummus, grilled chicken, feta, cucumbers, and a little plain yogurt dressing. Yum!
Since it’s just my husband and I and a baby that doesn’t eat solids yet, we eat a lot of beans and rice with everything and lots of salads. My husband loves salads, which is agreat thing since he’s allergic to most other raw vegetables.
Especially right now, I love a good chopped salad!

I feel like any time I cook fish and a fresh vegetable I’m making progress.
