What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..

Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

    I make chicken tacos. I cook a whole chicken (bonus – chicken stock), make fresh salsa, then serve on whole wheat tortillas with lettuce and radishes. Side of beans and rice.

    I use lean meats for healthy dishes…. always serve veggies for my kids (even if I sneak them into the food) and try to be balanced! 🙂

    My husband is a meat and potatoes guy and I’m more of a healthy, vegetables person so I compromise in my cooking. We love salmon or chicken packets. You just put salmon or chicken in foil, put any spices you want in there with a little olive oil, and add any vegetable you want. Bake for 30 minutes and you’ve got a healthy, yummy, versatile meal!

    My favorite healthy meal to prepare is black bean veggie burgers. I’ve tried many frozen black bean burgers and never been impressed, but we have this recipe that just thinking about it makes my mouth water. I can’t believe something so good for you could be so delicious!

    My favorite healthy meal is a modified chicken salad salad. I mix grilled or baked chicken with hummus and then place that mixture on my mixed greens and top with a drizzle of Newman’s Own Olive Oil & Vinegar dressing. So yummy.

    My girls like grilled veggies like peppers and carrots and couple of potatoes, I put them on a cookie sheet and drizzle about a tablespoon of olive oil on the top with a sprinkling of kosher salt. Yummy now I wanna eat this

    I love to make a big batch of peppers and onions and top it with a portioned controlled piece of protein!

    My favorite healthy meal is a baked potato and salad. When I do these for dinner I make sure there is loads of healthy toppings and minimize the cheese and butter which is what they’re usually topped with.
