What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..
Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

I love to make a big batch of quinoa, mix with sauted veggies (some of my favorits are red peppers, mushrooms, onion, artichoke, asaparagus) maybe throw in some beans and then top with some fresh herbs and paremesan. It makes a great lunch on its own or I’ll serve it along some grilled fish for dinner.

One of my favorite healthy recipes to make is grilled vegetable ratatouille. So easy, fairly healthy, and so delicious!
My whole family loves pita-bread pizzas and salad.
Roasted chicken with a fresh salad, maybe with rice, quinoa or lentils.
Love a lean grilled pieve of steak and marinated grilled veggies and brown rice.

I throw frozen chicken breasts, frozen corn, black beans, & salsa in a crockpot in the morning & by dinner time we have yummy shredded chicken tacos topped with avocado & sour cream. My family loves it.

roasted veg and salmon
I SO need this cookbook! Many of our dinners aren’t as healthy as they should be. One of our favorite healthy meals is taking what we used to eat – a steak & potato with cooked veggies, and changing it to a really nice raw spinach & veggie salad with strips of steak and homemade lowfat dressing. So where we used to eat a steak each, we now use one steak to make 3 yummy salads.
My favorite healthy meal is to cook up some tilapia and roasted asparagus.
One of our favorite healthy meals is to take a variety of fresh veggies (whatever’s in the fridge) and do a stir-fry, using cooking spray and a touch of sesame oil and reduced sodium soy sauce for flavor and then add either a little chicken breast or tofu for protein and serve it with steamed brown rice.

I love to make taco salad, made with crumbled vegan Boca or Morning star crumbles.I add 1/2 a packet of taco(low sodium) seasoning, then layer over lettuce, fat free shredded chedder. The salad dressing is 1/2 fat free thousand island and your favorite salsa.Very healthy and satisfying!
