Good Sunday afternoon everyone. What a crazy weekend it’s been around here. On top of getting ready for our big move to CA, we had 2 separate family Christmas parties on my husband’s side. We played 2 intense games of white elephant and ate until we all busted. It was awesome! I posted some pics of our festivities at the end of this post.
My cooking time has been pretty much shot down right now, but I did manage to make a big pot of good ol’ Taco Soup that the family loves. It is hearty, warm and delicious. Our favorite way to enjoy it is with a handful of greasy Frito’s tossed right on top. The best part is, dinner is done in a whopping 15 minutes! Sweet, now that’s my kind of dinner these days.

4 oz can diced green chilies
1lb can or frozen corn, drained
15 oz can black beans, drained
15 oz can red kidney beans, drained
15 oz can white beans, drained
Garnish With:
Sour Cream
Frito’s
Cilantro leaves
1. Place oil into a large 5 qt dutch oven over medium heat. Saute onion and bell pepper until softened, about 5 minutes. Stir in garlic and cook for 1 minute. Add beef, salt and pepper; cook until brown and crumbled. Add remaining ingredients until well combined. Simmer on low until ready to serve. Top with sour cream,Frito’s and cilantro leaves if desired.
8 large servings

Christmas Party Weekend

Here’s the crew we partied with Saturday night. I really married into an awesome family. We always have a great time. I’m the one to the right in the white dress, with the two little boys by my side and hubby is right above me wishing I didn’t wear my “hot” boots! I have to give him a hard time because he’s not a boot fan. Unfortunately I am!

I love boots, too! I’ve been wearing them everywhere I go. I found some on sale the other day for $20, and I bought them. Unfortunately they are a size 6. Heh. So my feet are crammed in there.
The gift exchange looks like fun. I didn’t know it was called white elephant. My friend was talking about white elephant the other day, and I didn’t know what he was talking out.
The soup looks delicious! I love greasy Fritos.

Heh, I also love boots, but in a dude way. I wear either combat boots or Dr Martens all the time. I actually haven’t worn sneakers since I was in jr high.

we had soup last night too. i had extra quinoa, so tossed that in with fresh herbs and one carrot, some celery and a can of diced tomatoes, served it with cheesy toast. your boys are adorable! mine are a little younger, but i LOVE being mama to two boys.
You’re super woman in my eyes! I thought I didn’t have time, but you’re trying to move and you have 2 kids to keep up with so I admire you for finding time! I love a quick soup so this is gonna get added to my favorites.

ok I am a daily blog stalker…I LOVE your recipes. I was just looking at your christmas party pictures and saw Bup& Bridget in your pictures! I love them! I grew up with Bups family and now am related through marraige. Small world!
I actually had all of these ingredients in my kitchen, so I whipped it up last night for dinner and LOVED it. My husband is not a soup-lover and he went back for more. Thanks for a great recipe.

I made your taco soup for dinner last night, and it was indeed quick and delicious! I left out the green bell pepper (because I hate it!) and used regular diced tomatoes instead of ro-tel. Other than that, I followed your recipe exactly. We’re adding it to our weekly rotation! Thanks!

I love, love, love this soup. I made it tonight for the second time and it was a hit. My 3 1/2 yr old ate his whole bowl with out having to be told, eat your food, eat your food, eat your food.
