What You’ll Need

  • butter– For most of my baking I use salted butter, but unsalted butter works just fine here too.
  • dark brown sugar– When shopping for brown sugar, you’ll see light brown sugar and dark brown sugar available. I like the richness of the dark brown sugar for this cookie.
  • granulated sugar– Granulated sugar is a fine sugar commonly used in baking/cookie recipes.
  • beaten egg– You’ll crack a large egg, beat it with a fork then measure it into the cookie recipe.
  • all-purpose flour– All-purpose flour is the main dry ingredient in this cookie recipe.
  • baking soda– Baking soda helps aid in the rising of the cookie.
  • kosher salt– Kosher salt is a coarse salt commonly used in cooking and baking.
  • white chips– Find white chocolate chips in the baking section of the grocery store. You can substitute chocolate if desired.
  • Circus Animal Cookies– Find Circus Animal Cookies in the cookie section of the grocery store.

How To Make an Animal Cookies Cookie

  1. Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper.
  2. Place butter and sugars into a medium bowl and stir until well combined. Add beaten egg and vanilla stirring until well combined. Add flour, baking soda and salt. Stir until just combined. Stir in white chips until combined. Use a large cookie scoop or ice cream scoop to place dough onto center of baking sheet. With spoon, press dough into a round flat cookie shape. Top evenly with pink and white Circus Animal Cookies. Top with additional sprinkles if desired. Bake for 12-14 minutes, until edges are just turning golden brown. Remove from oven and take a plastic or regular butter knife to go around edges to make round and push edges in to form a little texture if desired. I do this with most of my cookies to help out the shape if needed. Let cool for 15 minutes before transferring.

This looks delicious and I am thinking of making this on the 4th of July. Thanks a lot for sharing the recipe!

Does this cookie spread out at all, or does it remain the same diameter when baked as when you shaped it on the pan? I’m thinking of making more dough, and then making them just slightly smaller but still very large bakery-sized cookies. Just wanting to know what to expect for size difference going in versus coming out.

They spread quite a bit! It makes about a 8 inch round when baked. I use a knife to shape right after it comes out of the oven to make it perfectly round.
