What You’ll Need
Here are the ingredients you’ll need to make brown butter s’mores cookies at home. See the recipe card located at the bottom of the post for full instructions.
- Butter– I use salted butter for my recipes, but unsalted works fine too.
- Granulated Sugar– This is a fine white sugar that gives the cookies sweetness.
- Brown Sugar- I use light brown sugar for the recipe. Make sure it’s packed in the measuring cup when measuring.
- Eggs– For consistency, I use large eggs for my baking.
- Vanilla– Use pure vanilla extract for best tasting results.
- All-Purpose Flour– Flour is the main dry ingredient in the cookie recipe.
- Salt– I generally use kosher salt for my cooking and baking.
- Baking Soda– Baking soda helps the cookies rise when baking.
- Chocolate Chunks– I like to get the milk chocolate block from Trader Joe’s and cut it into chunks for these cookies.
- Marshmallows– Mini marshmallows work great for the recipe.
- Graham Crackers– Use full sheets of graham crackers and cut them into pieces.

Preheat Oven and Prepare Baking Sheet. Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper.
Brown Butter. Place butter into small saucepan over medium heat. Let cook until bubbly and browned. Swirl pan often. Once removed transfer to a heat proof bowl. Let cool for 10 minutes.
Cream Butter and Sugars. Pour brown butter and sugars into stand mixer, beating until well combined. Add eggs and vanilla, beating until well combined.
Dry Ingredients. Add flour, graham crumbs, baking soda, salt, marshmallows and chocolate chunks. Mix on low until just combined.
Scoop Dough Onto Baking Sheet. With a medium cookie scoop, place dough onto prepared baking sheet about 1 inch apart.
Bake. Bake for 12-15 minutes, until cooked through. Marshmallows will ooze, immediately after removing from over use a plastic butter knife to push oozing marshmallows back around cookies. Let cookies sit on baking sheet for 10 minutes before transferring. Serve warm or room temperature.
Recipe Tips For Success
Brown Butter. Don’t skip browning the butter. This brings a rich nutty flavor to the cookies that is hard to beat! See THIS POST that gives you step by step instructions on how to properly brown butter.
Shape Cookies When Warm. One of my favorite cookie tips, is as soon as the cookies come out of the oven, use a plastic knife to shape the cookies how you like them. Sometimes the cookies spread uneven, this helps to get nice round cookies before they set up!
How To Serve
Serve these s’mores cookies warm or room temperature at any gathering where dessert is needed. They’re a hit at every party.

I love this recipe. It is amazing and healthy. I must try this. Thanks for sharing ingredients.
These cookies are delicious! I changed the recipe to equal parts white and brown sugar (3/4 cup each). My oven isn’t a convection one, so it may have gotten a little too hot, but instead of an oozing marshmallow, the marshmallow caramelized! It was scrumptious and the guest that came ate them all quickly. After resting for 10 minutes, as instructed they taste the best. You can microwave them for a bit as well if they’ve cooled.
These work very well as bars! Promised my son I would make these but didn’t want to deal with the oozing marshmallows and too lazy to make cookies today. Baked in a parchment lined 13×9 glass pan at 325 for about 25 minutes until starting to brown on top. Also should mention that I reduced brown sugar to 1/2 cup. Trust me, with the marshmallows, chocolate and graham crackers, you’ll never miss it!
My kids and I just made these and they are amazing!!! My first time to do browned butter and it turned out great!
Can you please tell me what kind of chocolate bar you used in this tutorial? It looks really good
What kind of chocolate do you use? Semi-sweet? milk chocolate?
These look amazing and I must make them!
Hi Celina, you can use whatever you prefer. I generally use semi-sweet 🙂
I made these with my daughter this evening for her school play tomorrow. They are delicious.
So glad they were a hit!!
What chocolate bar did you use?
These s’mores are very delicious! I just found my new favorite cookies.
Gotta make more S’mores cookies! I love adding brown butter to everything! hehe
Me too Lynna!! Haha!
I’m making these now and can’t wait to try them! I realized I have leftover Bourbon caramel sauce that I made for a carrot cake recipe. It might be sugar overhaul but I think I might drizzle this over the top. Yum!
I saw these on instagram, I can’t wait to try them out
ahhhh, these DEFINITELY look to die for!!
I have tried to make several brown butter cookie recepies from your postings and I have yet to have them turn out. I wonder if I am doing something wrong? The dough is super crumbly and a fine powder. I have tried reducing the flour and trying high altitude adjustments. Thoughts? These cookies look amazing!!!

My kind of cookie, Jenny!
I do wish that you write how much butter in cups instead of “a stick”
1 stick is equal to 1/2 cup butter 🙂
I want a dozen of these cookies!! Everything in them makes me drool!
Everything about these cookies makes them totally irresistible!
Mmmmmm! Send some over to Colorado ASAP!!
YUM!!! I know I would be tempted to eat the entire batch!
