Easy Chicken and Rice Recipe
This smoky rice skillet is healthy and absolutely delicious. One of my favorite weeknight dinners. For those of you with a Trader Joes, run-don’t walk, to their frozen food area to pick up a box of their rice medley. You simply pop it in the microwave and poof it’s done. Seriously, I use it all the time. It’s fabulous in this rice skillet. If you are not lucky to have a Trader Joe’s in your area, use your favorite rice blend as a substitute.

Here’s your ingredients.
How To Make This Tasty Rice Recipe
- Heat oil into a large skillet over medium heat. Saute zucchini, squash, and onions until softened, about 5 minutes. Stir in garlic and cook for 1 minute. Add chicken, beans, rice, cumin, salt, pepper and parsley stirring to combine. Cook for 5 minutes or until hot.
Slice and quarter your zucchini.
…and your yellow squash.
Saute your veggies.
Saute until softened.
Stir in garlic.
Stir in your chicken.
Black beans please.
Stir in your cooked rice.
Almost done.
Add the smokiness now. A nice handful of cumin.
Add your salt and pepper.
…..a little parsley and you are good to go. Bon Appetit!
Easy Chicken and Rice Recipe
Ingredients
- 3 tablespoons extra virgin olive oil
- 1 1/2 cups finely chopped white onion
- 2 cups sliced zucchini
- 2 cups sliced yellow squash
- 2 tablespoons minced garlic
- 3 cups cooked shredded chicken
- 15 ounce can black beans drained
- 6 cups prepared rice medley
- 2-3 tablespoons ground cumin
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup chopped parsley
Instructions

Made this tonight! Followed all the steps, but it did not turn out good. I guess I’m not fun of cumin.
Does the trader joes rice have any seasoning on its own? If I use my regular rice will I be missing any flavor?

Looks wonderful and I’m excited to try it. I love all-in-one type dinners so I don’t have to make sides. Could I swap cilantro for the parsley? I don’t usually have fresh parsley on hand, but I almost always have cilantro.
