Kind of random, but last Sunday I was deciding what to make the boys and husband for dinner and just when I was going to make a pot of chili, I saw a package of tortellini in my pantry. I thought, I do chili mac all the time so why not add tortellini to my chili?! The rest is history and we loved this speedy to make dinner.

Here’s your line up. I found my tortellini at Trader Joe’s, but whatever brand you can find will work.

How to Make This Delicious Dinner

Cook your tortellini according to the package directions. Cook al dente, careful to not overcook.

Finely chop some onions.

Chili Tortellini

Saute your onion and garlic then brown the beef. Once browned, pour in your broth.

Add  your cooked tortellini back to the pot.

Add your beans and tomato sauce or diced tomatoes. I would suggest diced tomatoes.

A little cumin.

A little chili powder, then give a good stir.

Ingredients

  • 1 lb dry tortellini
  • 2 tbsp extra virgin olive oil
  • 1 cup finely chopped white onion
  • 2 tbsp fresh minced garlic
  • 1 lb lean ground beef
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp garlic salt
  • 32 oz reduced sodium chicken broth
  • 30 oz beans of choice
  • 15 oz Rotel diced tomatoes MILD version
  • 2 tbsp ground cumin
  • 1 1/2 tsp chili powder
  • 1/2 cup fresh chopped cilantro

Instructions

  • Cook tortellini according to package directions. Heat olive oil into a large dutch oven over medium heat.
  • Saute onion and garlic for about 5 minutes then brown beef until browned. Drain if necessary. 
  • Add broth, tomatoes, beans, cumin, chili powder and cilantro. Add cooked tortellini and heat for 10 minutes or until hot.
  • Reduce heat to a low simmer until ready to serve.

    I have made this chili recipe several times, I will never go back to the store bought packet again. Boyfriend didn’t totally love the tortellini, so I just make the chili, and it is wonderful!

    This is a great idea! I usually use a pretty similar chili recipe to yours, so I stuck with it and added tortellini towards the end (I got it in the refrigerated section, so it cooked pretty fast). Thanks for the suggestion!

    Mmm, this was fantastic! I added a little extra broth and cooked my tortellini right in there with the rest of it. The leftovers were just as good the next day! This had great flavor, and I love recipes that allow me to walk away from the stove while they cook. 🙂

    I have some questions–the recipe doesn’t specify if the beans are drained or not. Also, the pictures show two cans of tomato sauce, but the recipe just indicated 15 oz diced tomatoes. Is that tomato sauce in addition to the diced tomatoes or in place of them? Thanks!

Not only does it look delish, I have ALL the ingredients in my pantry–you saved me a trip to the store! My kids LOVE the tortellini from Trader Joe’s, we make soup with them all the time, a family favorite, so I hope they like this tortellini chili too!

    I made this and in the picture it shows tomato sauce and in the ingredient list it says diced tomatoes. I used diced tomatoes and it is a little more runny than a traditional chili. So maybe use the tomato sauce if you want it a bit thicker.

    I was going to make this today, but wasn’t sure if you drained the beans or not. It looks like you do in the pictures but no where does it tell you do drain and rinse them. Also, I don’t have chili powder and cumin so i am adding medium rotel tomatoes to it. Have you ever frozen this?

    Made this tonight and it was awesome! I had to make a couple of substitutions to use what I had on hand. I did use Rotel but only had original so I used 1 Tbsp of chili powder so it wouldn’t be too spicy for my son. I used black beans and a can of chili beans. I also added a small can of tomato paste because I really wanted it to have that nice red color and added flavor. I only had frozen tortellini so I just added it to the mixture as directed but straight from the freezer then let it sit and simmer about half an hour while waiting for my husband to get home. It was a perfect dinner on this cold, rainy ‘spring’ day.

    I just made this tonight and it is AMAZING! I wanted a little kick so I added organic fire roasted diced tomatoes. I also opted to use the three cheese tortellini since that is all my grocer store had in stock. So glad that is all they had in stock. I found your recipe via Pinterest and glad I did…a must share with family and friends 🙂
