What You’ll Need
Here are the ingredients you’ll need to make cheesecake bars at home. See the recipe card located at the bottom of the post for full details.
- Salted Butter– For most of my recipes I use salted butter. Unsalted works too.
- Granulated Sugar– This fine white sugar adds sweetness to the cookie bars.
- Light Brown Sugar– Light brown sugar also adds sweetness and richness to the bars.
- Egg– For consistency, I use large eggs in my cooking and baking.
- Pure Vanilla Extract– Use pure vanilla extract for best tasting results.
- All-Purpose Flour– Flour is the main dry ingredient in the cookies.
- Vanilla Instant Pudding Mix– Find instant pudding mix in the baking isle of the grocery store. Make sure the box says instant and not cook and serve.
- Kosher Salt– Kosher salt is a course salt commonly used in cooking and baking. I prefer it over table salt.
- Baking Soda– Baking soda helps the cookies rise during baking.
- Chocolate Chips– Milk or semi sweet is generally what I use. White chips and butterscotch would be good substitutions too.
- Cream Cheese– Use a full fat cream cheese for the recipe.
How To Make Cheesecake Bars
Preheat Oven and Prepare Baking Dish. Preheat oven to 350 degrees F. and line an 11 x 7 inch baking dish with parchment paper.
Cream Butter and Sugars. Place butter and sugars into a large mixing bowl or stand mixer. Beat until creamy and well combined.
Egg and Vanilla. Beat in egg and vanilla mixing well.
Dry Ingredients. Add flour, pudding mix, salt, and baking soda, mixing until dough forms. Stir in chocolate chips.
Divide Dough and Press Half Into Baking Dish. Divide dough into two equal parts. Press half of the dough into prepared baking dish.
Prepare Cream Cheese Mixture and Layer Over Dough. Place cream cheese and sugar into a large mixing bowl. Beat until well combined. Spread over cookie dough layer.
Add More Cookie Dough To Top. Use a cookie scoop to scoop remaining dough over cream cheese layer. Use an offset spatula to press and carefully spread dough over cream cheese layer.
Bake. Bake for 35-40 minutes, until golden brown on top and set in middle. Remove and let cool completely.
Cool and Cut Into Squares. Let bars cool completely and cut into squares.
Recipe Tips For Success
- Parchment Paper. I love lining my baking dish with parchment paper. It makes it much easier to remove bars from dish.
- Plastic Knife. Use a plastic knife to cut cookies into bars. No sticking.
- Use Real Butter. Use real butter for best tasting results. Make sure your butter is at room temperature before starting recipe.

Serve bars room temperature cut into squares for any occasion really. They’re great for picnics, Holidays and any celebration.
How To Store Leftover Bars
Store any leftover bars in an airtight container in the refrigerator for 3-4 days.
Freezing Instructions
To freeze cookie bars, place into an airtight container or freezer safe bag in the freezer for up to 3 months. Thaw before enjoying.

Can this recipe be doubled so I can use a larger pan. I don’t have the pan used in baking them. 9 x 13 is my smallest baking pan. Thank you.
