My chocolate chip cookie cheesecake bars are such a great recipe to treat your family and friends. Simple to prepare and stuffed with a sweet cheesecake filling. Be prepared to wow you guests!

Ingredients For Cheesecake Bars
- salted butter
- granulated sugar
- light brown sugar
- large egg
- pure vanilla extract
- all-purpose flour
- vanilla instant pudding mix
- kosher salt
- baking soda
- chocolate chips
- cream cheese
How To Make Cheesecake Bars
- Preheat oven to 350 degrees F. and line an 11 x 7 inch baking dish with parchment paper.
- Place butter and sugars into a large mixing bowl or stand mixer. Beat until creamy and well combined. Beat in egg and vanilla mixing well. Add flour, pudding mix, salt, and baking soda, mixing until dough forms. Stir in chocolate chips. Diving dough into two equal parts. Press half of the dough into prepared baking dish. Place cream cheese and sugar into a large mixing bowl. Beat until well combined. Spread over cookie dough layer. Use a cookie scoop to scoop remaining dough over cream cheese layer. Use an offset spatula to press and carefully spread dough over cream cheese layer. Bake for 35-40 minutes, until golden brown on top and set in middle. Remove and let cool completely. When bars are cooled, cut into squares and serve.
Add chocolate chips to mixing bowl and stir to combine.
Divide dough in two equal parts to start layering in baking dish.
Press 1/2 of the cookie dough into bottom of baking dish.
Prepare cream cheese layer and spread over cookie dough.
Use a cookie scoop to place the remaining cookie dough over cream cheese layer. Use an offset spatula to carefully press over top.
The top cookie dough layer does not have to be perfect. Bake at 350 degrees for 35-40 minutes until golden brown and set in middle.
Let bars cool completely and cut into squares.
