What You’ll Need

Here are the ingredients you’ll need to make cheesecake bars at home. See the recipe card located at the bottom of the post for full details.

  • Salted Butter– For most of my recipes I use salted butter. Unsalted works too.
  • Granulated Sugar– This fine white sugar adds sweetness to the cookie bars.
  • Light Brown Sugar– Light brown sugar also adds sweetness and richness to the bars.
  • Egg– For consistency, I use large eggs in my cooking and baking.
  • Pure Vanilla Extract– Use pure vanilla extract for best tasting results.
  • All-Purpose Flour– Flour is the main dry ingredient in the cookies.
  • Vanilla Instant Pudding Mix– Find instant pudding mix in the baking isle of the grocery store. Make sure the box says instant and not cook and serve.
  • Kosher Salt– Kosher salt is a course salt commonly used in cooking and baking. I prefer it over table salt.
  • Baking Soda– Baking soda helps the cookies rise during baking.
  • Chocolate Chips– Milk or semi sweet is generally what I use. White chips and butterscotch would be good substitutions too.
  • Cream Cheese– Use a full fat cream cheese for the recipe.

I really like the idea of using a cheesecake filling. This recipe is firmly on my ‘to do’ list. Perfect for an afternoon tea. Many thanks

Can this recipe be doubled so I can use a larger pan. I don’t have the pan used in baking them. 9 x 13 is my smallest baking pan. Thank you.
