I love baby showers! These fun colorful cookies are to celebrate a virtual baby shower for my good blogging friend Maria from Two Peas and Their Pod. She is the sweetest little thing ever and I am excited to share my cookies for Maria with you all today!
Amanda and I have been all over the place together this month, so on her last day here in CA we decided to prepare our cookies together! We tag teamed here for these photos. It was so nice having her in my kitchen to bake with.

How to Make The Best Oatmeal Cookie Sandwiches
You have no idea how handy it was to have two people to do this shot. It’s usually me trying to hold the bowl with one hand and snap the picture in the other hand. Love the action shots. So back to the picture….time to cream your butter and sugars.
Nothing like sugar and butter in a big bowl.
Add your eggies.
….and your vanilla.
Once your wet ingredients are mixed, slowly add your dry ingredients.
….and your chocolate chips.
Oh this dough was deadly. You gotta sample a little taste at this point.
Time to bake! 11-14 minutes at 350 degrees F.
While the cookies are baking, time to make the buttercream frosting. Butter, powdered sugar, milk and vanilla.
Frost the bottom of half of the cookies like so.
Dip the edges into your favorite colorful sprinkles.
All the way around.
Top with another cookie and voila’! Done.

Chocolate Chip Oatmeal Cookie Sandwiches

Ingredients
Chocolate Chip Oatmeal Cookies
- 2 sticks unsalted butter softened
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 tbsp pure vanilla
- 2 1/2 cups all purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1 tsp kosher salt
- 2 cups semi-sweet chocolate chips
- 2 sticks unsalted butter softened
Vanilla Frosting
- 3-4 cups powdered sugar
- 1 tsp vanilla
- 2 tsp milk or heavy cream
Instructions
Chocolate Chip Oatmeal Cookies
- Preheat oven to 350 degrees F. and line a baking sheet with a silpat liner or parchment paper.
- Cream your butter and sugars into a stand or electric mixer until well combined. Add eggs and vanilla mixing until well combined.
- Place flour, oats, baking soda and salt into a large bowl. Mix to combine. Slowly add to wet ingredients along with chocolate chips, mixing until just combined.
- Scoop dough onto prepared baking sheet about 1 inch apart. Press cookies down to about 1/2 inch before baking. Bake for 11-14 minutes, until edges start to turn golden brown.
- Let cool on baking sheet for 10 minutes before transferring to cooling rack. Let cool completely.
Vanilla Frosting
- Place softened butter into stand or electric mixer beating until smooth. Slowly add powdered sugar until thick and creamy. Add vanilla and milk until smooth and creamy. You can add more powdered sugar for a thicker frosting if desired.
- Frost half of your cookies with frosting on the flat/bottom side. Dip edges in your favorite sprinkles and top with another cookie to create the sandwich. Enjoy with a cold glass of milk.

These are so cute! I’m a sucker for anything with bright and colorful sprinkles. I think I have those same sprinkles (they look like the extra large nonpareils?) and I love how crunchy they are!
