There’s nothing more comforting than a pot of chicken soup simmering on the stovetop. It’s packed with extra chicken, bone broth for extra protein and delicious vegetables! You’re going to love this easy to make soup recipe.

What You’ll Need
Here are the ingredients you’ll need to make chicken vegetable soup at home. See the recipe card and video located at the bottom of the post for full instructions. Note: I ended up adding a few more ingredients to the soup not pictured above. See recipe below for all ingredients.
- Extra Virgin Olive Oil– Olive oil is used to saute vegetables.
- Garlic– Minced garlic is used as part of the vegetables in the soup.
- Onion– Diced onion is added to the vegetables in the chicken soup.
- Celery– Diced celelry is part of the vegetables in the chicken soup.
- Carrots– I like to use the package of pre chopped carrots, celery and onions found at Trader Joe’s and some grocery stores. It makes prep time nice and quick.
- Broccoli Florets– I had some extra broccoli florets in my refrigerator and used them in the soup recipe. They are a fantastic addition.
- Cooked Chicken– I used a couple rotisserie chickens shredded for my soup. I wanted extra chicken for that protein boost.
- Ranch Dressing Seasoning Mix- Find Ranch Dressing Seasoning Mix in the salad dressing isle. They come in a box, or sold as individual packets.
- Grated Parmesan Cheese– Use grated Parmesan cheese as part of the seasoning for the soup.
- Salt, Pepper, Garlic Salt- These are all included as the seasoning for the soup.
- Hot Sauce– I love adding a few shakes of hot sauce to season my soup. Gives it a nice little kick.
- Heavy Cream– Heavy cream was originally not added in my recipe, but I ended up adding a few splashes at the end and love how it gives it a perfect creamy taste.
- Fresh Parsley– I love adding chopped fresh parsley to my soup. Gives color and freshness.
How To Make Chicken Vegetable Soup
Saute Vegetables. Heat oil in large soup pot over medium heat. Add garlic and stir for one minute in the hot oil. Add onion, celery and carrots to hot oil. Cook and stir for 5 minutes to soften.
Add Broccoli. Stir in broccoli florets to the pot of vegetables. Stir to combine.
Add Chicken and Bone Broth. Place cooked chicken in the pot of soup, stirring to combine. Pour in bone broth and stir.
Seasonings. Add Ranch Dressing Seasoning, Parmesan Cheese, salt, pepper, garlic salt and hot sauce to the soup. Stir to combine and taste to see if it needs adjusting.
Heavy Cream and Parsley. I originally wasn’t planning on adding heavy cream to the soup, but decided to try a few splashes at the end and it was fantastic! I highly recommend it. Add heavy cream, stirring to combine. Garnish each bowl of soup with some chopped fresh parsley and serve hot.
Recipe Questions Answered
Can I Add Noodles?
Yes, you can cook any small pasta of your choice and add them to the soup. I like to undercook the pasta a minute or two so it doesn’t get too soft when added to the hot soup.
What Other Vegetables Can I Add?
I also wanted to add sliced zucchini to the soup. It would make the perfect addition. Corn, cauliflower florets and chopped bell peppers would be great too. Garbanzo beans would be a delicious addition too.
Can I Substitute The Chicken?
You can use whatever protein you’d like. Tender beef cubes would be delicious. Ground sausage would be great too. You can also choose to leave the chicken out completely for just a vegetable soup.
What Can I Use If I Don’t Have Ranch Seasoning Mix?
If you can’t find the Ranch seasoning mix, I would just adjust the salt, pepper and garlic salt until you are happy with the flavor. The Italian Dressing mix is also good if you want to try it instead of the Ranch.
Do I Have To Use Bone Broth? Is Regular Chicken Broth OK?
I love using the bone broth for the extra protein, but you can absolutely substitute with a regular low sodium chicken broth if you’d like.
How To Serve
Serve soup hot in individual serving bowls garnished with chopped parsley. I like to also serve the soup with some nice crusty bread for dipping and even a side salad.
Leftovers
Store leftover soup in an airtight jar/container in the refrigerator for up to 3-4 days. Reheat in a heat proof bowl, covered in the microwave for 90-110 seconds, or until hot. You can also reheat the soup in a small saucepan over medium low heat, stirring until hot.
