Cake Mix Cookie Bars
You are in for an absolute treat with my Gooey Oreo Strawberry Cake Bars. Making quick fix dessert recipes is always a favorite around my house. This gorgeous pretty in pink recipe is not only beautiful but absolutely tasty and perfect to bring to any occasion. Enjoy!!

What You’ll Need For Cake Mix Cookie Bars
- strawberry cake mix– I generally use Pillsbury
- butter– I use salted butter for most of my recipes, but unsalted butter is just fine too.
- egg– For your reference, I always use large eggs when baking.
- mini marshmallows– any brand of mini marshmallows are just fine.
- chocolate chips– semi sweet or milk chocolate.
- Oreo Cookies– You can use regular or double stuf
- prepared frosting– The pink Pillsbury prepared frosting is what I used here, but any is fine. You can even add a drop or two of red food coloring to white frosting if pink is not available.
How To Make Easy Strawberry Dessert
- Preheat oven to 350 degrees F. and line a 9×13 inch baking dish with parchment paper.
- Place cake mix, butter and egg into medium mixing bowl. Mix until dough forms. Place cookies into bottom of dish, top with marshmallows and chocolate chips. Top with pieces of strawberry cake dough evenly over the top. Bake for 35-40 minutes until baked through. When cool spread with frosting and sprinkle with cookie crumbs. Cut into squares and serve.
Drop pieces of the strawberry cake dough over top layer. Doesn’t have to be perfect. Bake for 35-40 minutes.
When bars are cooled, frost with frosting and additional cookie crumbs.
Tips For Making Cake Mix Cookie Bars
- Make sure you use parchment paper to line your 9×13-inch baking dish, makes it so much easier to remove bars and cut into squares
- Let bars cool completely before cutting into squares
- Use a plastic knife to cut your bars. It’s the best kept secret. The plastic doesn’t stick. Try it!
- Don’t sprinkle tops of bars with Oreo crumbs until right before serving to keep cookies crisp.
How To Serve Gooey Cake Mix Cookie Bars
These bars are really great brought to any party, but they’re especially adorable for a baby shower. They look great at an Easter table too!

Store any leftover cake bars in an airtight container for up to 3 days.

- 25 cream filled cookies
- 2 cups mini marshmallows
- 1 cup chocolate chips
- 15.6 ounce Strawberry Marshmallow Frost
- 1 cup crushed cream filled cookies
