Easy Blondie Recipe
Lemon poppyseed is one of my favorite flavor combinations. Seems to always be a sweet and delicious cake or pancake of some sort. I decided to turn that combination into one delicious blondie if I might say so myself. It’s dense, chewy and lemon poppyseed delicious. Dust with a little powdered sugar and you’ve got yourself a beautiful dessert to serve to family and friends. Enjoy!

What You’ll Need
Here are the ingredients you’ll need to make this easy blondie recipe at home. See the recipe card located at the bottom of the post for full instructions.
- Butter– I use salted butter for my cooking and baking recipes. Unsalted works just fine too.
- White Chocolate Chips– The white chips pair so great with the lemon and poppyseed.
- All-Purpose Flour- Flour is the main dry ingredient in the blondies.
- Granulated Sugar– This fine white sugar adds to the sweetness to the blondies.
- Baking Powder– Baking powder help the blondies rise during baking.
- Salt– I use kosher salt for my cooking and baking.
- Large Eggs– For consistency, I use large eggs for my cooking and baking.
- Lemon Curd– Find lemon curd in the jams and jellies section of the grocery store.
- Poppyseeds– Find poppyseeds in the spices section of the grocery store.
- Powdered Sugar– I like to dust the tops of my blondies with powdered sugar.


How To Make Blondies
Preheat Oven and Prepare Baking Dish. Preheat oven to 350 degrees F. and line an 8×8 inch baking dish with parchment paper.
Melt Butter. Put butter into a microwave safe bowl and microwave for 30-45 seconds until butter is melted and hot.
Add White Chocolate Chips To Melted Butter. Add 3/4 cup white chips and let sit for 1 minute. Stir until smooth, if needed place back in microwave for an additional 15-30 seconds to melt through.
Dry Ingredients. Add flour, sugar, chips, baking powder and salt into mixing bowl with melted chocolate. Stir to combine.

Add Eggs, Lemon Curd and Poppyseed. Stir in eggs and lemon curd and poppyseeds. Stir until well combined.

Transfer Batter To Baking Dish. Transfer to prepared baking dish, spreading evenly.
Bake. Bake for 30-35 minutes, until cooked through. Let cool completely then cut into squares. Serve warm, room temperature or chilled.

Dust With Powdered Sugar and Serve. Let your bars cool completely then cut into squares. Dust with a little powdered sugar and voila! Gorgeous and delicious treats. Enjoy!
Tips For Making The BEST Blondies
- Melt butter and add brown sugar while the butter is still warm. Make sure to cool this mixture.
- Let other ingredients, particularly eggs, come up to room temperature before you add them.
- You don’t want to add your eggs to hot butter and sugar or you’ll risk scrambling the eggs.
- Don’t overmix blondies; mix by hand instead of mixer for best results.

How To Serve
Serve lemon poppyseed blondies warm or room temperature cut into squares dusted with powdered sugar if desired.
Leftovers
Store any leftover blondies in an airtight container for up to 3 days.

Can the white flour be substituted with another?
I haven’t tried it with another flour, but I think you could substitute white whole wheat flour with no trouble.
