What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..
Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

Turkey Meatloaf
Graham cracker with coolwhip, put in freezer – tastes just like a ice cream sandwhich
I love to chop up all the fresh veggies from the garden, throw together with some herbs and garlic and a bit of cheese in a whole grain tortilla and throw on the grill for some grilled quesidillas. With some fresh homemade salsa-my 4 kiddos eat these up!

I try to make sure that all of my meals are well balanced, this comes from having a dietician mom. One of our favorite meals is salsa chicken.
My favorite healthy meal is tilapia cooked in olive oil and seasoned with lemon pepper, served with asparagus.
I’m not great with healthy cooking, but lately I’ve been roasting asparagus with just a little olive oil and seasonings. It’s about the only veggie my husband will actually eat!

My favorite healthy meal to cook for my family or my sweet roommates is whole wheat pasta with roasted broccoli and tomato with olive oil and parmesan cheese.

For healthy meals, we all love Rice Bowls. We start with a base on brown rice. To that we add a variety of toppings, depending on what is in the house; no salt added corn, black beans, lean ground beef with low sodium taco seasoning, fresh pico, salsa, low fat cheese, fat free refried beans, tomatoes, cilantro. The list goes on and on. The best part is that the 2 kids (7 and 5) will always eat this because they can make it exactly how they want it.

One of my favorite go-to meals is Chicken Fajitas:) I love the flavors of the marinated chicken and roasted peppers (we aren’t onion eaters). Served with homemade wheat torillas, homemade salsa with LOTS of cilantro, and all the fixins! It just doesn’t get any better!

Hi! My latest healthy recipe is a baked version of chicken nuggets, made with panko bread crumbs, skim milk and asiago cheese. (I found the recipe on the How Sweet blog). I was excited to try it, and nervous my husband wouldn’t like them. But he loved them! I made them again the next week and my mother-in-law loved them and is making them for her husband! yay for my new find!!!
I like making black bean chili. It’s easy and delicious.
Hmmm…One of my latest healthy things to make for my family is spaghetti made with zucchini noodles, but I also love making salmon, veggies and brown rice
