What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..

Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

    hmmm, tough one! i like to rustle up a good old thai green curry, its easy and i think pretty healthy if you use as many veggies as you have on hand along with the protein of choice, but lets be fair most importantly its scrummy 🙂

    I make a veggie curry, usually cauliflower & chickpeas, fairly often. I buy the jarred sauce and it is so fast and easy!

    I love making grilled veggie sandwiches! I just grill the veggies, that are seasoned with a little olive oil and salt and pepper, and put them on a yummy crusty roll. I love them and so does my family!

    Would love this cookbook! One of my family favorites is Cobb Salad–we take romaine lettuce, tomatoes, cucumbers, reduced fat cheese, low fat turkey bacon, grilled chicken breasts, hard boiled egg and put it all on a platter. Low fat (kids & hubby) or Fat free (mine)Ranch dressing on the side and a few croutons. My kids BEG for this all the time!

    One or our favorite family meals is a Portuguese/Greek style Lemon Garlic marinated boneless skinless chicken breast, done on the BBQ and served with Greek Salad, Pita Bread and Tzatziki 🙂 MMMmmmmm…gives me a craving!

    Breakfast is home made granola with home made yogurt and fruit 🙂

    My go-to healthy meal consists of a lightly marinated grilled beef or chicken, along with a grilled veggie [zucchini is my fave] and some sort of starch [either brown rice or a potato]. And some kind of fruit with whipped cream for dessert. Yum!

    My favorite healthy meal is also easy! Chicken marinated in italian dressing and baked or grilled. Asparagus(mine and my sons favorite!) and brown rice as sides! We eat this at least once a week since it is so easy!

    We mix quinoa with different fresh vegetables for variety. Quinoa is such a great substitution for ordinary rice in dishes.
