Thrilled to partner with Fisher Nuts today to bring you a show stopping pancake recipe!  I’ve developed a pancake around some of my very favorite flavors and let me tell you, these lasted about 30 seconds with my boys, ha!  I used Fisher Nuts Walnut Halves and Pieces for my buttermilk oatmeal pancakes.  All varieties of Fisher Nuts are preservative free: I am working with Fisher nuts, as it is the only national brand of recipe nuts entirely without preservatives.

These are out of this world amazing.  Hope you enjoy!!

Simple ingredients you’ll likely have in your pantry and refrigerator.

Fisher Nuts Walnuts….mmmm!!! So great in all of my baked goods…and these pancakes 🙂

Dry ingredients into the bowl along with the oatmeal.

I coarsely chopped the walnuts.

Time for the buttermilk.

Add the egg and splash of vanilla.  Give a nice stir and spoon batter into a hot non-stick medium size skillet.  Brown on both sides until middle is set.  Stack until all batter is used up.

Layer each pancake layer with sliced bananas 🙂

Now through October 20, 2015, home chefs from across the country are invited to submit their original recipe using Fisher pecans, walnuts or almonds to www.myfreshtwist.com for a chance to win a trip for two to New York City, $500 spending money and a meet-and-greet with Food Network Chef Alex Guarnaschelli at her restaurant, Butter.
The top twenty entries will be professionally photographed and showcased on www.myfreshtwist.com where Fisher fans and their friends and families will be able to vote for the top three recipes from November 3, 2015 until November 17, 2015. Chef Alex Guarnaschelli and a panel of judges will then select the grand prize winner from the three finalists. Recipes will be judged on their originality, integration of nuts, taste and visual appeal.
One grand prize winner will receive a trip for two to New York City, a meet-and-greet with Chef Alex Guarnaschelli and $500. As with last year’s winning recipe, this year’s winning recipe will also be featured on the Fisher nuts website, social media pages and in local and national news publications. The grand prize winner will be announced the first week of December.
Nineteen finalists will receive a $100 Visa gift card, an autographed Chef Alex cookbook and a Fisher nuts sample pack.
Forty random weekly winners will also win a Chef Alex cookbook and a Fisher nuts sample pack.

Oatmeal Walnut Banana Caramel Pancakes

Prep time: 15 min | Cook time: 10 min | Total time: 25 min

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup quick oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coarsely chopped Fisher Walnuts Halves and Pieces
  • 1 cup buttermilk
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 3-4 large bananas, thinly sliced
  • 1 cup prepared caramel sauce, warmed

Directions

  1. Place medium sized non-stick skillet over medium heat.
  2. Place flour, oats, baking soda, salt and walnuts into a large mixing bowl. Stir to combine then pour in buttermilk, egg and vanilla, mixing to combine.
  3. Spoon about 1/4 cup batter into hot skillet, swirling to make round. Cook until browned then flip to brown other side. Remove and stack onto plate. Continue finishing pancakes until batter is gone. To serve, layer sliced bananas around edges of each pancake and drizzle with warm caramel sauce.

Makes 6 Servings
