There’s nothing more appealing than a giant colorful salad ready for your guests to dig into. This chickpea salad is packed with tomatoes, cucumbers, and parsley to name a few ingredients! The simple homemade dressing is the perfect topping that brings amazing fresh flavor to the salad. Give it a try for your next party.

What You’ll Need
Here are the ingredients you’ll need to make this easy Mediterranean Salad recipe at home.
- Chickpeas– Find chickpeas in the bean section of the grocery store. Make sure drain the can before adding to salad.
- Parsley– I like to use organic fresh curly leaf parsley for my salad. Finely chop it for best results.
- Broccoli– Use two heads of fresh organic broccoli for this recipe. I like to shave it into the salad. You can also chop it if you’d like.
- Cucumbers- Look for English Cucumbers for the salad. Quarter them and cut into thin 1/8 inch slices.
- Kalamata Olives- Drain the olives before adding to the salad. I like to pick up the jar that’s already sliced.
- Red Onion– Thinly slice and chop the red onion for best tasting results. Note, red onion is not photographed in my salad here. Highly recommend adding them.
- Baby Tomatoes– If your tomatoes are small enough, you don’t need to cut them, just add them to the salad after they’ve been washed.
- Feta Cheese– Use crumbed full fat Feta cheese for the recipe.
- Grilled Chicken– I like to grill my own chicken for the recipe, but if time is short use cooked chicken of your choice.
- Lemon– Fresh lemon juice is added to the salad for freshness.
- Olive Oil– Use extra virgin olive oil, it is used to make the salad dressing.
- Dijon Mustard– Dijon mustard gives a nice punch of flavor to the salad dressing.
- Salt and Pepper– Use salt and pepper of your choice for the recipe.

How To Make Mediterranean Chickpea Salad
Add Vegetables and Chicken To Bowl. Place all vegetables and grilled chicken into a large salad bowl.
Lemon. Squeeze juice from a lemon over salad ingredients. I’ve even used the juice of two lemons for an added punch of citrus.
Prepare Dressing. Place olive oil, mustard, salt and pepper into a small mason jar. Screw on lid and shake until well combined.
Drizzle Dressing Over Salad. Drizzle salad dressing evenly over salad ingredients then toss to combine. Cover and refrigerate until ready to serve.

- Use Fresh Ingredients. For this beautiful salad, make sure you are picking fresh organic ingredients for best tasting results.
- Switch Up or Leave Out Protein. Switch up the protein in this salad if you’d like or leave it out all together. It’s great with and without the protein.
- Refrigerate Overnight. To really marinate the flavors of the salad, refrigerate overnight before serving. I’ve also served it right after making it, so no worries if you don’t have time to refrigerate overnight.

Ingredients
- 15 oz can of drained chickpeas
- 1 bunch fresh parsley, finely chopped

Instructions
- Place all of the vegetables and chicken into to a large salad bowl. Squeeze juice of one lemon over all ingredients.
