Eggs are a staple in my home as I bet they are in your homes too! I was so impressed to find that Eggland’s Best Eggs contain ten times more Vitamin E than ordinary eggs, 100 mg of Omega 3, 25% less Saturated Fat, and 200 mcg of Lutein, shown to contribute to eye health. It was also comforting to find that Eggland’s Best Eggs are produced by hens that are fed an all-natural, all-vegetarian diet. Basically, these eggs are more healthy than your typical egg and that rates GREAT with me!! With all the cooking and baking I do, I want nothing but the best eggs for my family.
I was not sure if I would be able to tell a difference when cooking with Eggland’s Best Eggs, but I will tell you, there was a difference, they tasted wonderful! I will definitely be a long time consumer of Eggland’s Best!
Here are three recipes of mine that feature eggs…

Healthy Chocolate Chip Banana Muffins with Peanut Butter
Ingredients
- 4 tablespoons softened butter
- 2 Eggs (I use Eggland's Best Eggs)
- 2 ripe bananas mashed
- 1 cup low fat vanilla yogurt
- 2/3 cup sugar
- 1/4 cup creamy peanut butter
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup semi sweet chocolate chips
- 1/4 cup Turbinado sugar or another coarse sugar
- 1/2 cup shredded sweetened coconut
Instructions
- Preheat oven to 350 degrees F.
- Place butter, eggs, bananas, yogurt, sugar and peanut butter into a large mixing bowl. Mix to combine.
- Place all dry ingredients into a separate large bowl and stir to combine.
- Slowly add to wet ingredients along with the chocolate chips until just combined.
- Scoop into muffin tins lined with paper cups 2/3 way full. Sprinkle with coarse sugar and shredded coconut.
- Bake for 20-25 minutes or until toothpick comes out clean from center.

Broccoli Cheddar and Sausage Egg Muffin Pull-A-Parts
Ingredients
- 6 Pillsbury Buttermilk biscuits from can, 8 count
- pinches of kosher salt and fresh cracked black pepper
- 1 cup cooked broccoli florets cut up into small pieces
- 1/2 cup cooked sausage links cut up
- 4 Eggland's Best Eggs
- 3 tablespoons milk
- pinches of kosher salt and fresh cracked black pepper
- 1 cup shredded cheddar cheese
- Cholula hot sauce
Instructions
- Preheat oven to 350 degrees F. Spray a texas size 6 Cup muffin tin with cooking spray. You’ll have 2 extra biscuits left over. Bake them separately if so desired. Cut each of the 6 biscuits into 8 triangles and place into each muffin tin. Lightly sprinkle each biscuit cup with salt and pepper.
- Sprinkle broccoli and sausage evenly over each biscuit filled muffin cup.
- Place eggs, milk, salt and pepper into a mixing bowl. Whisk until well combined. Pour evenly over each cup. With a fork make sure eggs get to the bottom and around each piece of biscuit. Top each with sprinkles of cheddar cheese and bake for 28-32 minutes or until a toothpick comes out clean from center of biscuits and cheese is golden brown. Let cool for 5 minutes before removing from muffin cup. Remove and arrange onto serving plate. If you like it spicy serve with a nice hot sauce like Cholulla, it’s wonderful!! Pull them apart with your fingers or cut with a fork. Enjoy.

Silverdollar Waffle Pancakes with Blackberry Buttermilk Syrup
Ingredients
For the Syrup:
- 10 fresh blackberries
- 2 tablespoons sugar
- 1 stick butter
- 3/4 cup sugar
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
For the Pancakes:
- 2 Eggland's Best Eggs
- 3/4 cup buttermilk
- 1/2 stick melted butter
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons granulated sugar
Instructions
For the Syrup:
- Place blackberries and sugar into a small saucepan over medium low heat. Stir occasionally for about 10 minutes. Pour into a sieve placed over a small bowl pressing on berries to extract the rest of the liquid. Set aside; discard smashed berries and seeds.
- Place butter, sugar and buttermilk into a separate small saucepan over medium heat. Stir and melt until mixture comes to a low boil. Remove from heat and add in baking soda and vanilla. Mixture will foam. Mix in blackberry liquid then pour syrup into a serving dish. Cover to keep warm while preparing waffle pancakes.
For the Pancakes:
- Whisk eggs, buttermilk, butter and vanilla into a medium bowl until well combined. In a separate bowl, sift the flour, baking powder, salt and sugar. Mix into wet ingredients until just combined.
- Place waffle pancake pan (or large skillet) over medium heat and spray with cooking spray. When hot, pour a couple Tablespoons into each waffle mold. Carefully flip after 1-2 minutes or until browned on bottom. Cook second side until golden brown. Continue to cook until all batter is used.
- Stack waffle pancakes and pour LOTS of syrup over top, enjoy!

I found an overnight egg and sausage casserole that has turned into a Christmas morning favorite at my house!
Ready-Made magazine’s current issue featured pancakes. One of our favorites, with a slight variation, were featured. The recipe is called Oven-Puffed Plum Pancake. We used apple in the plum’s place and omitted salt and lemon juice. We always bake ours in our cast iron skillet. Here’s our altered recipe:
2-3 apples, cored and sliced
1/2 c butter
3 eggs
1/2 c milk
1/2 c all purp flour
1 tsp vanilla
1/2 c brown sugar, packed
2 tsp cinnamon
Heat oven to 450. In cast iron skillet, melt 1/4 c of the butter, add apples and saute for about 5 mns. Remove from burner. In bowl, mix eggs, milk, flour and vanilla. Pour over apples. Place in oven and bake about 12 mns, or until puffed and browned. Remove from oven. Pour remaining 1/4 c butter (melted) on to pancake, top with mixed brown sugar and cinnamon sprinkled over and bake another 5-8mns so sugar gets carmalized.

I gotta say that my favorite thing to make with eggs is an egg sandwich. any style eggs really, but I’m partial to fried eggs:) throw it on a hoagie roll with some lettuce, tomato, onion and all that good stuff and I’m in heaven.

Ham and cheese stuff n’ puff has become a favorite around here. Stove Top, eggs, ham, & cheese are the basics. Makes a great casserole!
I love french toast. My husband adds a little coconut or vanilla rum to the egg mixture. Yum!

French toast casserole which calls for quite a few eggs…yum!
Migas. Saute some chopped corn tortillas, onion, diced jalapeno in a little oil. Drain. Scramble 6-8 eggs in butter…1/2 through add diced tomato. When eggs are almost cooked, add the the tortillas, onion & pepper. YUM!
I love omelettes, especially with veggies, ham, and tons of cheese. My husband adores them too! Another way we love eggs is plain ol’ hard boiled. Then slice them up. For some reason my husband loves to have these as a snack! :o) Great giveaway!
I love eggs on their own! I like making them soft-boiled and dipping slice of toast in them!
Brazos Baked French Toast
1 (16oz) loaf french bread
8 oz cream cheese
1 1/2 c. half and half
1/4 c. maple syrup
10 eggs
8 TBSP melted butter or margarine
powdered sugar
Cube bread and layer half in a 9×13 in. pan. Cut the cream cheese into small pieces and spread evenly across the bread. Cover with remaining bread cubes. Mix half and half, syrup, eggs and butter and pour over. Press down with spatula so that all the liquid is absorbed by the bread. Cover and refrigerate overnight. Bake at 350 degrees for 45 min. Sift powered sugar over top. Cut into 8-12 servings. Serve with maple syrup.
I LOVE egg bake. Eggs, ham, cheese! Throw them in a casserole dish and bake. YUMMO
eggs…the perfect food! my favorite egg recipe is pan fried, with a slice of hoop cheese with a piece of smoked turkey on top placed between a whole wheat bagel…delish!
I recently returned from living in spain for a 4 month period and am a now big fan of the spanish tortilla. Similar to a frittata, but staying true to Spain’s simple ingredient list it is basically cubed potatoes, olive oil, salt, and most importantly eggs…throw some pimientos on there and you’ve got a dish!
Our favorite egg recipes are either french toast or egg burritos. For the french toast I put a small amount of milk with apple pie spice or nutmeg in the egg mixture. When I make egg burritos I usually put bacon or whatever meat we have, salsa, any cheese (montery jack is the favorite), red or yellow bell peppers. I usually use eggs from Trader Joe’s (cage-free).
I love a good quiche!
this sounds really weird, but once we added chopped leftover tamales to scrambled eggs for breakfast burritos. it was so good.

I love quiche lorraine
Love poached eggs….no vinegar!! On a trip to England a few years back, I got introduced to them and I have loved them since. Serve poached egg on toast and cut 1/4 of the bread off to be the “soldier.” Simply, easy, nothing better!
Another favorite is scrambled eggs with spinach and purple onions topped with feta cheese and sliced grape tomatoes
Crepes with raspberry jam and cream cheese have to be one of our favorite uses of the marvelous egg.
I like to make breakfast burritos (anytime of the day really) which include scrambled eggs, cheese, salsa on a warmed tortilla
My favorite way to eat eggs is just plain scrambled with mushrooms and salsa! Yum!

My families favorite egg reciepe is just simple deviled eggs. I usually take them to any potluck and have them at every party I host. Super easy to make and very delicious!
My kids love a sausage quiche that I make. They love to eat it for breakfast or dinner.
I make a lot of quiches and always use the Eggland’s Best Eggs. I started using them in the last Pillsbury Bake-off and was very impressed with the difference. My husband even buys them without being told if he stops at the store.
He eats the cage-free,boiled each morning. I always use them in my baking.
This is going to be a rather unique recipe, but growing up, my mother would simmer Campbell’s Tomato Soup, but crack a couple of eggs in it. You don’t mix the egg or anything after you crack them in. You let them cook in the soup. Something about the tomato soup and the egg in it is just delicious to eat!
