Eggs are a staple in my home as I bet they are in your homes too! I was so impressed to find that Eggland’s Best Eggs contain ten times more Vitamin E than ordinary eggs, 100 mg of Omega 3, 25% less Saturated Fat, and 200 mcg of Lutein, shown to contribute to eye health. It was also comforting to find that Eggland’s Best Eggs are produced by hens that are fed an all-natural, all-vegetarian diet. Basically, these eggs are more healthy than your typical egg and that rates GREAT with me!! With all the cooking and baking I do, I want nothing but the best eggs for my family.
I was not sure if I would be able to tell a difference when cooking with Eggland’s Best Eggs, but I will tell you, there was a difference, they tasted wonderful! I will definitely be a long time consumer of Eggland’s Best!
Here are three recipes of mine that feature eggs…

Healthy Chocolate Chip Banana Muffins with Peanut Butter
Ingredients
- 4 tablespoons softened butter
- 2 Eggs (I use Eggland's Best Eggs)
- 2 ripe bananas mashed
- 1 cup low fat vanilla yogurt
- 2/3 cup sugar
- 1/4 cup creamy peanut butter
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup semi sweet chocolate chips
- 1/4 cup Turbinado sugar or another coarse sugar
- 1/2 cup shredded sweetened coconut
Instructions
- Preheat oven to 350 degrees F.
- Place butter, eggs, bananas, yogurt, sugar and peanut butter into a large mixing bowl. Mix to combine.
- Place all dry ingredients into a separate large bowl and stir to combine.
- Slowly add to wet ingredients along with the chocolate chips until just combined.
- Scoop into muffin tins lined with paper cups 2/3 way full. Sprinkle with coarse sugar and shredded coconut.
- Bake for 20-25 minutes or until toothpick comes out clean from center.

Broccoli Cheddar and Sausage Egg Muffin Pull-A-Parts
Ingredients
- 6 Pillsbury Buttermilk biscuits from can, 8 count
- pinches of kosher salt and fresh cracked black pepper
- 1 cup cooked broccoli florets cut up into small pieces
- 1/2 cup cooked sausage links cut up
- 4 Eggland's Best Eggs
- 3 tablespoons milk
- pinches of kosher salt and fresh cracked black pepper
- 1 cup shredded cheddar cheese
- Cholula hot sauce
Instructions
- Preheat oven to 350 degrees F. Spray a texas size 6 Cup muffin tin with cooking spray. You’ll have 2 extra biscuits left over. Bake them separately if so desired. Cut each of the 6 biscuits into 8 triangles and place into each muffin tin. Lightly sprinkle each biscuit cup with salt and pepper.
- Sprinkle broccoli and sausage evenly over each biscuit filled muffin cup.
- Place eggs, milk, salt and pepper into a mixing bowl. Whisk until well combined. Pour evenly over each cup. With a fork make sure eggs get to the bottom and around each piece of biscuit. Top each with sprinkles of cheddar cheese and bake for 28-32 minutes or until a toothpick comes out clean from center of biscuits and cheese is golden brown. Let cool for 5 minutes before removing from muffin cup. Remove and arrange onto serving plate. If you like it spicy serve with a nice hot sauce like Cholulla, it’s wonderful!! Pull them apart with your fingers or cut with a fork. Enjoy.

Silverdollar Waffle Pancakes with Blackberry Buttermilk Syrup
Ingredients
For the Syrup:
- 10 fresh blackberries
- 2 tablespoons sugar
- 1 stick butter
- 3/4 cup sugar
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
For the Pancakes:
- 2 Eggland's Best Eggs
- 3/4 cup buttermilk
- 1/2 stick melted butter
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons granulated sugar
Instructions
For the Syrup:
- Place blackberries and sugar into a small saucepan over medium low heat. Stir occasionally for about 10 minutes. Pour into a sieve placed over a small bowl pressing on berries to extract the rest of the liquid. Set aside; discard smashed berries and seeds.
- Place butter, sugar and buttermilk into a separate small saucepan over medium heat. Stir and melt until mixture comes to a low boil. Remove from heat and add in baking soda and vanilla. Mixture will foam. Mix in blackberry liquid then pour syrup into a serving dish. Cover to keep warm while preparing waffle pancakes.
For the Pancakes:
- Whisk eggs, buttermilk, butter and vanilla into a medium bowl until well combined. In a separate bowl, sift the flour, baking powder, salt and sugar. Mix into wet ingredients until just combined.
- Place waffle pancake pan (or large skillet) over medium heat and spray with cooking spray. When hot, pour a couple Tablespoons into each waffle mold. Carefully flip after 1-2 minutes or until browned on bottom. Cook second side until golden brown. Continue to cook until all batter is used.
- Stack waffle pancakes and pour LOTS of syrup over top, enjoy!

I love homemade pudding, which has a handful of eggs in the recipe. So delicious!
I love making pancakes, Swedish pancakes with oatmeal in them, to be specific. LOVE! Thanks for hosting this giveaway!
My favorite sandwich with eggs is Tuna, celery, and boiled eggs all mixed up with some salad dressing. If you haven’t tried it please do so you will LOVE IT. You can either put it on bread or a crossiant.
My son and I love to take a piece of toast, and use a cookie cutter to cut out a shape in the middle. We remove the cut out shape and set it aside. Then we scramble an egg in a bowl with a little milk. We place the piece of toast in a non stick pan, and add the eggs to the cut out part of the toast. After it’s cooked on both sides we add jelly to the part of the toast we removed. It’s a great breakfast, and a fun way to get kids involved in cooking.
I’m a simple girl and I love breakfast for all meals, so I would have to say my favorite meal with eggs would be a great french toast made with french bread cut nice and thick.
My favorite is Crock Pot Egg Bake — so easy and great for company!
1 bag frozen hashbrowns
1 pound ham
1 medium onion
2 green peppers
2 cans of mushrooms
12oz shredded cheddar cheese
12 eggs
1 cup milk
Salt
Pepper
Chop onion, green peppers, and mushrooms. Cut ham into strips. Mix together ham and veggies. Layer 1/3 of the hashbrowns, 1/3 of the ham/veggie mix, then 1/3 of the cheese, repeat. Then mix 1 dozen eggs with 1 cup milk. Add salt and pepper to taste then pour over the layers. Cook on low for 6-8 hours.
We love to either make German pancakes or potato frittata, which is hash browned potatoes, cheese and ham or sausage with an eggy milk mixture and seasoned salt poured over the top and baked until cooked through. It’s yummy!
i love egg white omelets with cheese, green peppers, green onions, and tomatoes…healthy and yummy!!!

My family loves eggs! My youngest son’s favorite dinner is one my mother in law calls “eggy ally goldenrod” (I’m sure it was ala goldenrod but it’s funner to say ally). My mom called it “creamed eggs on toast”. Basically its a bechamel sauce (white sauce) with sliced hard boiled eggs in it, and served over toast. My mother in law slices only the whites of the eggs in the sauce, and then runs the yolks through a sieve which become the “goldenrod” sprinkles on top on the creamed mixture. Very pretty and quite yummy too! Hmmmm, I guess I better try this with the yummy Egglands Best Eggs!
My favorite egg dish is plain old fashioned scrambled eggs with cheese. I like to make it with onion powder and garlic powder. Great taste!
My favorite dish with eggs are waffles that my fiance makes. He folds beaten egg whites into the batter which makes the waffles sooo airy and fluffy. They’re delicious!
We have a recipe called “the worlds best chocolate chip cookie” and they truly are! If they are baked at just the right timing they are the best cookies we have ever made. We like adding butterscotch chips too. And of course the recipe calls for EGGS!
Our favorite egg breakfast are the omelets in a bag! You put 2 beaten eggs in a freezer ziploc bag with some cheese, green peppers and any other topping you prefer then put in a pot of boiling water and let them boil for 13 minutes. yum!!

My favorite egg dish is weekend omelettes, especially right after a holiday, when we have whipping cream in the house. Why is this my favorite? Because husband makes them while I read the paper in bed!!
when I think of eggs (not IN something, but on their own) I want good ol scrambled eggs with salt, pepper and cheese. YUM Alongside some pancakes and breakfast potatoes and your tummy’s full!
German pancakes! They are quick and easy and so delicious. Love them with good jam, and/or syrup!
I love making breakfast casserole- cut up refrigerated biscuits doused in scrambled egg with bacon and cheese. Pop in the oven and its so delicious!
I love eggs it doesn’t really matter how, but I make a yummy breakfast pizza with hasbrowns, eggs, and ham. Its one of my favorite weekend meals!
I love me a good mexican egg dish. We live in Texas and Migas is my
absolute favorite. Scrambled eggs with jalapenos, tomatoes, cilantro,
and cheese over hashbrowns and topped with cruncy tortilla strips. Wrap it all up in a flour tortilla with some sour cream, guac, and cholula. My mom made an excellent green chile, egg, and cheese bake at Christmas that would be a very close second.
I like eggs with frozen mixed vegtables and plenty of cheese, the only kind of omlet I like. I love to cook with eggs, one of my favorites is pound cake.
My favorite egg recipe is a simple egg dipped french toast… but yuummmmm it is so tasty! thanks for the opportunity!
Me and my family loves scrambled eggs for breakfast. I have even been known to make them for lunch and dinner in a pinch too. No fancy recipe here just eggs and maybe a little cheese on top to spice it up. I take great pride in feeding my kids healthy meals and my kids cry in the morning if they don’t have either oatmeal or eggs, I guess I must be doing something right.
I don’t really like eggs but would love $100!
I love eggs! One of my favorite recipes is this quiche. It is so good…I could eat it all day!
– unbaked pie crust, bake at 375 for 8 minutes, then fill with the following:
-1 C. boiled potatoes or hashbrowns
-1 C. ham or sausage
-1 1/2 C. cheese
Beat together the following until well blended:
-4 eggs
-1 C. milk
-1/2 tsp. marjoram
-1/4 tsp. salt
Pour eggs over everything in the pie crust. Bake at 375 for 45-50 minutes or until knife comes out clean.
My favorite dish with eggs is breakfast hash. So good with bacon and sausage and veggies. Mmmm Mmmmm.
I love deviled eggs every summer, but all year round we make my dad’s special Swedish pancakes with scrambled eggs and bacon. So yummy!
My favorite “egg” recipe is custard rice pudding with freshly grated nutmeg on top.
My family loves Grill Cleaners, which are basically messy omelettes. I use sausage (bulk or smoked), onions, bell pepper, cheese, and diced potatoes. After all that is cooked, I pour about 8 beaten eggs over the top and scramble as they cook! So yummy. My husband always puts a spoonful of mayo in his to make it creamy.
Besides all the baking I do with eggs, I love a good breakfast burrito featuring large amounts of scrambled egg! I usually cook the egg with sauteed green bell pepper, onion and sometime diced ham – the ham depends on if I’m adding bacon to the burrito or not. Then I pile the eggs on a tortilla and add some sort of a potato, shredded cheese and top it off with a mexican burrito sauce or salsa verde. I could eat one every day! YUM!
My favorite egg dish is mini quiche. I make them in muffin tins so I can eat them for breakfast, lunch or dinner. I like them with whatever leftovers and veggies I have in the fridge! It is a great way to clean out. Plus you can choose to make a crust or do it the easy way without!
It sounds simple but I love a fried egg on toast. I just had it for lunch actually =)
My favorite egg is simply a hard boiled egg. I can have it on its own or add it to so many other things.
Just a plain old omelette works for me! A little cheese & ham…perfect!
