Eggs are a staple in my home as I bet they are in your homes too! I was so impressed to find that Eggland’s Best Eggs contain ten times more Vitamin E than ordinary eggs, 100 mg of Omega 3, 25% less Saturated Fat, and 200 mcg of Lutein, shown to contribute to eye health. It was also comforting to find that Eggland’s Best Eggs are produced by hens that are fed an all-natural, all-vegetarian diet. Basically, these eggs are more healthy than your typical egg and that rates GREAT with me!! With all the cooking and baking I do, I want nothing but the best eggs for my family.
I was not sure if I would be able to tell a difference when cooking with Eggland’s Best Eggs, but I will tell you, there was a difference, they tasted wonderful! I will definitely be a long time consumer of Eggland’s Best!
Here are three recipes of mine that feature eggs…
Healthy Chocolate Chip Banana Muffins with Peanut Butter
Ingredients
- 4 tablespoons softened butter
- 2 Eggs (I use Eggland's Best Eggs)
- 2 ripe bananas mashed
- 1 cup low fat vanilla yogurt
- 2/3 cup sugar
- 1/4 cup creamy peanut butter
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup semi sweet chocolate chips
- 1/4 cup Turbinado sugar or another coarse sugar
- 1/2 cup shredded sweetened coconut
Instructions
- Preheat oven to 350 degrees F.
- Place butter, eggs, bananas, yogurt, sugar and peanut butter into a large mixing bowl. Mix to combine.
- Place all dry ingredients into a separate large bowl and stir to combine.
- Slowly add to wet ingredients along with the chocolate chips until just combined.
- Scoop into muffin tins lined with paper cups 2/3 way full. Sprinkle with coarse sugar and shredded coconut.
- Bake for 20-25 minutes or until toothpick comes out clean from center.

Broccoli Cheddar and Sausage Egg Muffin Pull-A-Parts
Ingredients
- 6 Pillsbury Buttermilk biscuits from can, 8 count
- pinches of kosher salt and fresh cracked black pepper
- 1 cup cooked broccoli florets cut up into small pieces
- 1/2 cup cooked sausage links cut up
- 4 Eggland's Best Eggs
- 3 tablespoons milk
- pinches of kosher salt and fresh cracked black pepper
- 1 cup shredded cheddar cheese
- Cholula hot sauce
Instructions
- Preheat oven to 350 degrees F. Spray a texas size 6 Cup muffin tin with cooking spray. You’ll have 2 extra biscuits left over. Bake them separately if so desired. Cut each of the 6 biscuits into 8 triangles and place into each muffin tin. Lightly sprinkle each biscuit cup with salt and pepper.
- Sprinkle broccoli and sausage evenly over each biscuit filled muffin cup.
- Place eggs, milk, salt and pepper into a mixing bowl. Whisk until well combined. Pour evenly over each cup. With a fork make sure eggs get to the bottom and around each piece of biscuit. Top each with sprinkles of cheddar cheese and bake for 28-32 minutes or until a toothpick comes out clean from center of biscuits and cheese is golden brown. Let cool for 5 minutes before removing from muffin cup. Remove and arrange onto serving plate. If you like it spicy serve with a nice hot sauce like Cholulla, it’s wonderful!! Pull them apart with your fingers or cut with a fork. Enjoy.

Silverdollar Waffle Pancakes with Blackberry Buttermilk Syrup
Ingredients
For the Syrup:
- 10 fresh blackberries
- 2 tablespoons sugar
- 1 stick butter
- 3/4 cup sugar
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
For the Pancakes:
- 2 Eggland's Best Eggs
- 3/4 cup buttermilk
- 1/2 stick melted butter
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons granulated sugar
Instructions
For the Syrup:
- Place blackberries and sugar into a small saucepan over medium low heat. Stir occasionally for about 10 minutes. Pour into a sieve placed over a small bowl pressing on berries to extract the rest of the liquid. Set aside; discard smashed berries and seeds.
- Place butter, sugar and buttermilk into a separate small saucepan over medium heat. Stir and melt until mixture comes to a low boil. Remove from heat and add in baking soda and vanilla. Mixture will foam. Mix in blackberry liquid then pour syrup into a serving dish. Cover to keep warm while preparing waffle pancakes.
For the Pancakes:
- Whisk eggs, buttermilk, butter and vanilla into a medium bowl until well combined. In a separate bowl, sift the flour, baking powder, salt and sugar. Mix into wet ingredients until just combined.
- Place waffle pancake pan (or large skillet) over medium heat and spray with cooking spray. When hot, pour a couple Tablespoons into each waffle mold. Carefully flip after 1-2 minutes or until browned on bottom. Cook second side until golden brown. Continue to cook until all batter is used.
- Stack waffle pancakes and pour LOTS of syrup over top, enjoy!

An omelet made with lean ham, a bit of cheese, salsa and sauteed onions. Roasted asparagus on the side and wheat toast! yum!!
i love to throw in 3-4 eggs for a chicken fried rice dish. we love it! we fry the eggs with the already cooked eggs. throw it in with the chicken and veggies and there you have it. a perfect fried rice dish. (of course dont forget the other seasonings as well)
i think my favorite way to have eggs are a childhood favorite, Eggs in a Nest. I have crohns disease and this is a comforting dish to eat when I’m not feeling well.
My favorite thing about eggs are eating them by themselves. I could eat them at every meal. I love omlettes, deviled eggs, and any just tried a new pudding recipe with them! MMMM!
We like to cut a circle out of a piece of bread. Put that in a skillet with a little butter. Then add an egg to the hole in the middle of the bread. Yummy and our kids love these!
My favorite breakfast recipe is to make a breakfast burrito. Start with a whole-wheat tortilla, make a scrambled egg and add any fresh veggies I have on hand. Spinach, kale, zucchini, avocado, broccoli. Finish it with some cheese – swiss or feta are my favorites. Mmmm. 🙂
I like them plain old over easy or scrambled with ham and cheese. The Egglands Best eggs are my fave- so much better than the generic store brands!
I like a good ole egg white omelette with fresh saute’d veggies.
I love good old fashion french toast. When preparing add a little vanilla to the milk and eggs. Yummy!
My favorite egg recipes: any frittata and my angel food cake, if you can count that. 🙂
My favorite recipe with eggs is german pancakes. it reminds me of my grandma.
1 cup milk
1 cup flour
1/4 tsp salt
6 eggs
3 Tbsp. butter
melt butter in 9×13 pan. beat milk, flour, eggs and salt together. pour into pan. bake 25 minutes at 350!
my grandma makes them the best!
I love making (and eating) quiches! My mother also makes a delicious egg souffle we love eating around the holidays!
I love a simple over-medium fried egg. I like to clean up what yolk runs out with a piece of toast too.
My favorite egg recipe is a crustless quiche that I make for family brunches. We prefer it with 4 cheeses and spinach, but it’s a versatile recipe that you can add almost anything to.
I adore poached eggs on heavily buttered toast … and fried egg sandwiches … *drool* … heading to the kitchen now!
My favorite thing to make with eggs is Pannukakku. It’s a finnish oven baked pancake.
preheat oven to 350. Melt a 1/2 stick of butter in a 9×13 pan. Remove once melted. Beat 5 eggs, add 3/4 cup sugar, beat some more. Add 1 cup flour, 1 tsp salt, and 2 cups milk. Mix all ingredients together. Pour melted butter into mixture and stir again. Pour into 9×13 pan.
Bake for 35 minutes or until puffy and edges are browning up nice. If wanted you can put syrup, or powdered sugar on top. We eat them plain.

my favorite egg recipe is an simple omelette!! I love all kinds of omelette’s but my favorite would be a veggie omelette with feta cheese! YUM!

My favorite is German Pancakes
I eat eggs almost every day but my favorite use for eggs would definitely be Deviled Eggs.
I love making what we call “omelet muffins” which are similar to your pull-aparts above, but filled with onions, peppers, salsa, etc.
Egg salad sandwiches made with homemade mayo, homemade sweet relish and on homemade hamburger buns!
I love some whole eggs mixed with egg whites, chopped spinach, and red hot pepper!
Welove huevos rancheros, but we do them with a twist.
Each person gets 1 corn tortilla lightly warmed, 1 over easy egg, sprinkle with any pieces of meat of choice, chopped green onions, sprinkles of feta, a few spoonfuls of kidney beans and pinto beans. Any other options of choice.

So I am not the greatest at cooking eggs, but I am good at eating them!!!! I like a classic omelet with cheese, ham, onion, peppers, and mushrooms. Yummy!!! The best is also having breakfast for dinner.
my fave recipe is, eggs and potatoes. scramble eggs, and add baked potatos and top with cheese!! Yummy!
One of my favorite egg containing recipes is chicken salad! I just became a fan in the past two years and now I love it! You put it in with the chicken, mayo, onion, celery and seasonings. Yum!
My kids love soft cooked and I just made almost a dozen and a half and they were gone in minutes! Just cut them in half moons with salt and pepper.
I LOVE EGGS! one of my favorites is to take a wonton wraper, push it into a muffin tin, fill with raw egg, top with cheese and bake! they are so cute and fun to eat!!!
French toast. We can’t go a week without it and without eggs, it would be nothing.
Breakfast Burritos!!! Any and all of them. I recently tried making a breakfast enchilada, same idea just with sauce on top. It was yummy! So anyway it is just the basics eggs, potatoes cooked with onion and green pepper (maybe some Anaheim pepper), cheese, whatever meat you choose. I love ham or bacon. Then you roll them up in a flour tortilla (I ALWAYS use the uncooked, they are so much better)and top with green enchilada sauce and cheese. Then bake them until warm. Out here in Utah we have the best restaurant, Cafe Rio, and they make the best enchilada sauce so I buy it from them instead of the grocery store. Mmmmm, I’m getting hungry. 🙂
I LOVE crepes that my husband makes. I don’t have the recipe right now, but I can’t make them like he does. That’s the one thing he makes in our house and they are delicious. I prefer to eat them with cinnamon and sugar.
