Eggs are a staple in my home as I bet they are in your homes too! I was so impressed to find that Eggland’s Best Eggs contain ten times more Vitamin E than ordinary eggs, 100 mg of Omega 3, 25% less Saturated Fat, and 200 mcg of Lutein, shown to contribute to eye health. It was also comforting to find that Eggland’s Best Eggs are produced by hens that are fed an all-natural, all-vegetarian diet. Basically, these eggs are more healthy than your typical egg and that rates GREAT with me!! With all the cooking and baking I do, I want nothing but the best eggs for my family.
I was not sure if I would be able to tell a difference when cooking with Eggland’s Best Eggs, but I will tell you, there was a difference, they tasted wonderful! I will definitely be a long time consumer of Eggland’s Best!
Here are three recipes of mine that feature eggs…

Healthy Chocolate Chip Banana Muffins with Peanut Butter
Ingredients
- 4 tablespoons softened butter
- 2 Eggs (I use Eggland's Best Eggs)
- 2 ripe bananas mashed
- 1 cup low fat vanilla yogurt
- 2/3 cup sugar
- 1/4 cup creamy peanut butter
- 1 1/2 cups all purpose flour
- 1/2 cup whole wheat flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup semi sweet chocolate chips
- 1/4 cup Turbinado sugar or another coarse sugar
- 1/2 cup shredded sweetened coconut
Instructions
- Preheat oven to 350 degrees F.
- Place butter, eggs, bananas, yogurt, sugar and peanut butter into a large mixing bowl. Mix to combine.
- Place all dry ingredients into a separate large bowl and stir to combine.
- Slowly add to wet ingredients along with the chocolate chips until just combined.
- Scoop into muffin tins lined with paper cups 2/3 way full. Sprinkle with coarse sugar and shredded coconut.
- Bake for 20-25 minutes or until toothpick comes out clean from center.

Broccoli Cheddar and Sausage Egg Muffin Pull-A-Parts
Ingredients
- 6 Pillsbury Buttermilk biscuits from can, 8 count
- pinches of kosher salt and fresh cracked black pepper
- 1 cup cooked broccoli florets cut up into small pieces
- 1/2 cup cooked sausage links cut up
- 4 Eggland's Best Eggs
- 3 tablespoons milk
- pinches of kosher salt and fresh cracked black pepper
- 1 cup shredded cheddar cheese
- Cholula hot sauce
Instructions
- Preheat oven to 350 degrees F. Spray a texas size 6 Cup muffin tin with cooking spray. You’ll have 2 extra biscuits left over. Bake them separately if so desired. Cut each of the 6 biscuits into 8 triangles and place into each muffin tin. Lightly sprinkle each biscuit cup with salt and pepper.
- Sprinkle broccoli and sausage evenly over each biscuit filled muffin cup.
- Place eggs, milk, salt and pepper into a mixing bowl. Whisk until well combined. Pour evenly over each cup. With a fork make sure eggs get to the bottom and around each piece of biscuit. Top each with sprinkles of cheddar cheese and bake for 28-32 minutes or until a toothpick comes out clean from center of biscuits and cheese is golden brown. Let cool for 5 minutes before removing from muffin cup. Remove and arrange onto serving plate. If you like it spicy serve with a nice hot sauce like Cholulla, it’s wonderful!! Pull them apart with your fingers or cut with a fork. Enjoy.

Silverdollar Waffle Pancakes with Blackberry Buttermilk Syrup
Ingredients
For the Syrup:
- 10 fresh blackberries
- 2 tablespoons sugar
- 1 stick butter
- 3/4 cup sugar
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
For the Pancakes:
- 2 Eggland's Best Eggs
- 3/4 cup buttermilk
- 1/2 stick melted butter
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons granulated sugar
Instructions
For the Syrup:
- Place blackberries and sugar into a small saucepan over medium low heat. Stir occasionally for about 10 minutes. Pour into a sieve placed over a small bowl pressing on berries to extract the rest of the liquid. Set aside; discard smashed berries and seeds.
- Place butter, sugar and buttermilk into a separate small saucepan over medium heat. Stir and melt until mixture comes to a low boil. Remove from heat and add in baking soda and vanilla. Mixture will foam. Mix in blackberry liquid then pour syrup into a serving dish. Cover to keep warm while preparing waffle pancakes.
For the Pancakes:
- Whisk eggs, buttermilk, butter and vanilla into a medium bowl until well combined. In a separate bowl, sift the flour, baking powder, salt and sugar. Mix into wet ingredients until just combined.
- Place waffle pancake pan (or large skillet) over medium heat and spray with cooking spray. When hot, pour a couple Tablespoons into each waffle mold. Carefully flip after 1-2 minutes or until browned on bottom. Cook second side until golden brown. Continue to cook until all batter is used.
- Stack waffle pancakes and pour LOTS of syrup over top, enjoy!

Eggs save the day a lot of nights at our house because scrambled eggs with sharp cheddar cheese and lots of pepper are one thing I can always count on my 18-month-old boy eating. Great giveaway, Jenny!
I love spinach, tomato, and provolne omlettes. They are my favorite way to eat eggs!
My favorite recipe to use eggs with is French Toast. I could eat it all day!
My husband has eggs every morning sunny side up over medium. I never used to like eggs until I got married and now I love them!
I LOVE adding scrambled eggs to any type of fried rice, especially chicken fried rice! Just scramble eggs with a bit of salt and pepper (sometimes some hot chili pepper flakes for some extra spicyness), then add it into the fried rice towards the very end of cooking.
My favorite is an egg and sausage bake with crescent rolls.
I love burritos with sausage, peppers, onions, mushrooms, cheese, salsa and scrambled eggs! Yum!
I love eggs! I love poached eggs on toast!
Let’s see it would have to be the very easy
BREAKFAST CASSEROLE
2 tbsp. butter
2 c. cheese (American, cheddar, Swiss or combination)
12 eggs
Salt & pepper to taste
12-16 oz. breakfast sausage, sliced & fried
4 oz. can mushrooms, drained
2/3 c. half and half
Spread butter in 9″x13″ pan. Shred cheese and sprinkle half over the butter. Break eggs on top of cheese, poke the yolks, but do not stir. Sprinkle eggs with sausage. Sprinkle mushrooms over sausage. Pour half and half over casserole. Top with remaining cheese. Sprinkle with paprika. Bake for 30 minutes at 350 degrees until golden brown. Let stand 5 minutes, then cut in squares.
I love Flan, but I have only made it once.
My friend just gave me a recipe for breakfast muffins which are eggs, sausage and biscuick baked into fluffy egg muffins. Yum!
I LOVE omelets!!!!!! Christmas morning we have omelets with the ham from christmas eve dinner, cheese, bacon pieces, onions, salsa and anything else you want to add. They are the BEST!!!
I don’t eat alot of eggs, but when I have it I like the sinmple scrambled eggs with dices ham,onions, and bell pepper. Oh, and I can’t forget the splash of Tapatio on top! Delish! 🙂
I love to make casseroles….
and custard for my granny….6 yummy egg yolks, cream vanilla a sugar. Can’t go wrong!
I’m not crazy about just eating eggs but for something different & to add some protein I drop an egg into ramen & stir it up so at least there’s something good in that stuff.

Eggs are in ALOT of foods. It is hard to think of my favorite egg recipe. I guess I like old fashioned egg omelettes with onion and gp and cheese.
My favorite way to eat eggs is in a canadian bacon and aspagus frittata. It’s soooooo yummy! You add cream, a little lemon juice and parmesan cheese to the egg mixture, and sprinkle a little more parm cheese before popping it under the broiler to finish cooking. It’s really delicious!

I love eggs. Mostly just plain and simple, scrambled or in an omlet.
Now I’m craving eggs after reading all those yummy recipes 🙂 My favorite is making them for my husband for breakfast. He likes his eggs over medium well – which very few restaurant cooks know how to do – so we usually just make them at home. with a side of cheese scrambled eggs for the kids.
How funny–right now I’m baking biscuits to make egg & cheese breakfast sandwiches! German Pancakes all the way!!
I love this simple dish that reminds me of my mom. She would make rice and would fry up a couple of eggs and serve them over the rice.
Even now, for a quick dinner, that is what I will make for myself. It’s comfort food for me!
I have a bunch of favorite egg things…we love eggs in our house! I love Eggs in a Basket. Butter a slice of bread on both sides. Use a small juice glass to cut a hole in the middle. Place bread in skillet on med high. Add a small pat of butter to the center hole and then crack your egg right it in. Add some salt and pepper and when it is cooked to your liking, flip it over and you are done! Don’t forget to cook the middle. Serve it with the fried bread circle on top. I also like to microwave 2 eggs in a mug with a wedge of laughing cow cheese! Great quick breakfast on the go!
Banana Bread
½ C Butter
1 ¼ C Sugar
3 Mashed Bananas
¼ C Milk
2 C Flour
1 tsp. Soda
¼ tsp. Salt
1 tsp. Baking Powder
1 C Chocolate Chips
2 Eggs
Mix all ingredients well. Grease and flour loaf pans. Bake @ 350 degrees for 45 mins. Or until done!
I love just good ‘ol scrambled eggs…I mix the eggs with a little milk, lots of cheese and salt & lemon pepper! Yum!!
I go through about 6 dozen eggs a week with breakfast and baking. It is hard to pick one yummy recipe. Something simple – gotta go with Ranch Eggs. (Scrambled eggs with ranch whiped with them. So yummy!
I was surprised to see that they are actually different. Good different! They are wonderful!
Breakfast Casserole
6 pieces of white bread
6 eggs, beaten
1 pound cooked and crumbled sausage
salt
pepper
lots of shredded cheese!!
Break up bread into pieces, mix with beaten eggs, sausage, s&p, and cheese in 9×13 casserole dish. Refrigerate over night. Bake at 350* for 30 minutes. Yum!
Hmmm…I would say my most egg-ceptional recipewould be for good old chocolate chip cookies. I use a traditional recipe, but use 1 stick butter, 1 egg (equivalent), and all white suger instead of brown, almond extract, 1 1/4 cups flour, 1/2 tsp salt, 1 tsp baking soda, and a chopped white chocolate bar a and a white dark chocolate bar…MMMM!
I love adding eggs to my grits in the morning. We add a fried or soft boiled egg with pepper grave and cheese and green onions to a bowl of grits. It is filling and delicious and a real treat from all the sweet sugary breakfasts that are out there.
I would have to say that my favorite addition to any homemade soup is EGGS, I add eggs to any soup that I can. I think that the addition of eggs adds to the wonderful flavor and also adds a great source of protien.
my husband and i love eggs especially in spinach and cheese quiche…..soooo yummy! with a side salad or a mug of soup you have a perfect light meal.
I just made a variation of a recipe that I saw in a magazine. Overall concept is toasted country bread, topped with warm tomato slices (little EVOO, quick sear), sautéed mushroom medley (salt, pepper, EVOO, and fresh thyme), poached eggs, shaved parmesan, and crumbled crispy prosciutto. YUM YUM! We actually had it for dinner with a bowl of soup. Need to work on my egg poaching skills. I am no Julia Child.
I’ve never tried Eggland’s Best eggs, but I sure will now. My favorite egg dishes are homemade omelets or breakfast casseroles. So versatile. One of my favorite casseroles is the Zippy Egg Casserole from allrecipes.com.
