This is in my crockpot right now. Except I used chicken breasts, basil pesto, a little extra stock and put some potatoes right in with it just to try.
Made this today and it was amazing!! The meat was falling off the bone at about three hours on high. The flavor was so good, I couldn’t bear to get rid of any of the juices so I made a pan gravy with them and used it over mashed potatoes. Definitely a keeper!!!

I recently tried this pesto chicken thigh recipe and it was a big hit. The thighs were full of flavor and so tender and juicy. I am a pesto fan, so I may be a little biased. Def. will make this again. So easy and it’s a great meal to make on a weekday.
