These Chocolate Chunk Cookies with Marshmallow & Toffee are heaven with a glass of milk! These chewy cookies are loaded with marshmallow bits, toffee, and two kinds of chocolate!
Chocolate Chunk Cookies with Marshmallow & Toffee
Some of you might remember these cookies that I posted from Instagram. I wasn’t planning on sharing the recipe, but got so many requests here you go!!
The star of the cookies is definitely these adorable crispy little marshmallow bits I found at Target. Amanda told me about them a couple weeks ago and I knew I had to have them!
When they bake into the cookies they get slightly soft with a little bite still. Fabulous!
Chocolate Chunk Cookies with Marshmallow & Toffee
Equipment
- Oven
Ingredients
- 2 sticks unsalted butter softened
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 1/2 tsp pure vanilla extract
- 3 cups all purpose flour
- 1 tsp baking soda
- 3/4 tsp kosher salt
- 1 cup chocolate chunks
- 1 1/2 cups white chocolate chips
- 3/4 cup mini marshmallow bits
- 1/4 cup toffee chips
Instructions
- Preheat oven to 350 degrees F. and line large baking sheet with parchment or silpat liner.
- In stand mixer, beat butter and sugar for 3-4 minutes, will be light and fluffy. Add eggs and vanilla until well combined. Slowly add flour, chocolate, chips, marshmallow bits and toffee.
- Mix until just combined. With a medium cookie scoop, scoop dough onto prepared baking sheet, about 1 inch apart.
- Bake for 10-12 minutes, until baked to your liking. Remove and let cool for 5 minutes on baking sheet before transferring to cooling rack.

I just made these! So yummy! Though I had to add a little milk. My dough was too dry. My daughter was ecstatic about the mini marshmallows! Delicious!

i was totally planning on making something else. I really was but then you showed me these and i am a sucker for chocolate chip cookies and my mom brought me some of those mini marshmallows and I have toffee chips soooo my old plan has been thrown out the window.
If I can find these marshmallow bits here in Kentucky, this will be the next cookie I try! I may order the mallows off the Internet. Hmm…

I love toffee and white chocolate in my cookies so these sound amazing!! I have to hunt for these mallow bites..knowing our area, it’ll probably be really hard! I live in a huge metropolitan area but they seem to always not be as stocked as they should be!! delicious creation, Jenny!

Those little marshmallow bits are perfect in cookies, so sweet and chewy and delicious!
Jenny this is my perfect cookie..I love marshmallows and white chocolate. Seriously, about half the desserts on my blog use both of those things, or for sure one of those items. These remind me of your Biscoff/white chocolate cookies from about 6 mos or so ago…I love that dough!
