This chicken and broccoli crock pot recipe is one of our very favorites, especially for Sunday dinner! I’m such a fan of quick fix simple family dinner ideas. This Creamy Crock Pot Chicken Broccoli Over Rice has been a family favorite crock pot recipe for years. It literally takes 5 minutes to get everything in the crock pot…you close the lid and forget about it for a few hours. Serve this saucy chicken and broccoli over steamed rice and dinner is served. This recipe makes for great leftovers too. We’ve even had the chicken inside burritos the next day or over toast. Lots of options.

What You’ll Need
Here are the ingredients you’ll need to make this simple crockpot dinner. See the recipe card located at the bottom of post for full details.
- Chicken Breast– Chicken breast or tenderloins work great for this recipe. I prefer thawed chicken when preparing the recipe, but frozen chicken will work if needed. The cook time will be longer when adding frozen chicken to the crockpot.
- Cheddar Cheese Soup– One can of cheddar cheese soup. Find this in the soup isle of the grocery store.
- Cream of Chicken Soup– One can of cream of chicken soup, also found in the soup isle of the grocery store.
- Cajun Seasoning– Cajun seasoning adds a little spice to the chicken sauce.
- Garlic Salt– I prefer Lawry’s garlic salt for my cooking.
- Sour Cream– Sour cream is added to the cream sauce.
- Broccoli Florets– Fresh steamed broccoli florets are added to the chicken sauce shortly before serving.
- Shredded Cheddar Cheese– Use shredded cheddar cheese sprinkled over top chicken sauce when serving over rice.
How To Make Crockpot Chicken
Add Soup Mixture In Crockpot. Place soups, chicken broth, cajun sauce and garlic salt into a crockpot over low heat. Whisk until smooth.
Place Chicken Into Crockpot. Add chicken, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours.
Shred Chicken. When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and steamed broccoli.
Serve. Serve over steamed rice and sprinkle with cheese if desired.

How To Serve Crockpot Chicken and Broccoli
Serve the hot chicken and broccoli over warm steamed rice. Top with shredded cheddar cheese and even a little hot sauce if you’d like. I like to serve this dinner with a nice side salad and even some garlic bread for dipping. This is a nice Sunday dinner for feeding a crowd too.
Leftovers
Store any leftover crockpot chicken in an airtight container in the refrigerator for up to 3-4 days. Reheat in a heatproof bowl covered in the microwave for 60 second intervals until hot.
Can Crockpot Chicken Be Frozen?
Freeze the crockpot chicken once it’s cooled, place it in an airtight container and freeze up to 3 months if needed. Thaw completely before reheating chicken sauce. Place thawed sauce into a large saucepan over medium low heat until hot. Serve over warm steamed rice.

Ingredients
- 4 boneless skinless chicken breasts
- 14 ounce can Cream of Chicken Soup
- 14 ounce can Cheddar Soup
- 14 ounces Chicken Broth
- 1/2 teaspoon Cajun Seasoning

- 1 cup sour cream
- 6 cups steamed broccoli florets Boiled in hot water for 3 minutes then drained
- 1 cup shredded cheddar cheese

Homemade Cheese Sauce
Equipment

Ingredients
- 1 stick unsalted butter
- 1/2 cup all purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 2 cups chicken broth
- 2 cups finely shredded mild cheddar cheese
Instructions
- To prepare roux, melt butter into a medium saucepan over medium heat. Once melted whisk in flour, salt and pepper. Stir and cook for 3-4 minutes until color of roux will gets slightly darker. Slowly whisk in broth, stirring continuously until thickened, about 2 minutes. Reduce heat to a simmer and stir in cheese until melted.
- Please note, if you choose the homemade sauce, you have to prepare it first, you can’t just add all of the ingredients to the crockpot. You’ll also cook your chicken breast in the broth first, shred then add the homemade cheese sauce. Before serving add sour cream and steamed broccoli.

The recipe is kind of confusing as to when you add the cheese. Is it at the start or at the end? In the instructions it says sprinkle with cheese if desired.

I made this Crockpot meal for dinner tonight.. Yummy It hit the spot on a semi cool night in Maine.. I didn’t have cream of chicken soup so I used cream of mushroom soup and also I didn’t have chicken broth, all I had was beef broth so I used that. It was a crowd pleasure for sure.. Would recommend only cooking on high. I tried to do the 6 hours on low and my chicken was no where near fully cooked. Had to turn on high for another 2 hours… Which means I had some hungry family wait for chicken to cook.
Have you ever made this with frozen chicken breasts?
I saw Sarah’s and a few others comments about it being watery. Mine was too! When you add the soup- are you adding the 1 can of water since it is condensed soup or is that why you add the chicken broth? Just curious because I think maybe that has something to do with it?

I haven’t made this yet, but i think normally when using condensed soup as an ingredient, you just use the soup itself, without the added water.
I’m making this for my family with little ones. Is there anything I could substitute the Cajun seasoning for? Looks great!

Hi. Just saw this on Pinterest. Looks so good and I’d really like to make it, but can it be made without using 1 can of cheddar soup? Could I just add shredded cheddar cheese instead, do you think- or maybe just use 2 cans of cream of chicken and throw in some shredded cheddar instead? I’m thinking it’ll work, but I’d like your opinion. Do you think it’s the cheddar soup that “makes” it?

Oh I hate that phase. My 17 month old occasionally spits out something he’s had before. I think he hates the texture. We caught on that he eats more when doing it himself. Glad yours liked it.
I made this tonight and mine turned out thin. Might need to cut back on the chicken broth. Also, when I put the sour cream in it didnt seem like it melted all the way. I can still see it in the sauce. Is it suppose to do this?
I have all the ingredients I the crock pot for dinner tonight. It looks great! However, I wish you would have edited your ingredient list to reflect your correction in the comments. It want until after I bought and used two extra 10oz cans of soups to make the 14oz that I saw your comment about 14oz being incorrect. It would have saved me money and wasted food had you corrected the recipe.

I just made this delicious meal! However mine was quite watery! I followed the steps word for word and I guess I thought maybe it would be thicker. Is this something that other people have experienced also?

This might be a silly question as I don’t use my slow cooker all that often, but do u have to cook chicken before placing it in or just raw? It seems too easy. Lol thanks

Have you ever subbed yogurt for the sour cream?
We haven’t tried it in this recipe but we do sub Greek yogurt for mayo in other dishes. I like your idea but we haven’t tried it yet. 🙂
