Treat yourself to my Springtime White Chocolate Lemon Pudding Cookies! You’ll be glad you did 🙂

White Chocolate Lemon Pudding Cookies

My oldest son is a lemon dessert kind of boy.  We were in the mood to make cookies a few nights ago and he said, “Mom, let’s make some lemon cookies!”  He didn’t have to twist my arm 🙂  We created these perfectly delicious lemon chip cookies with lemon curd as the secret ingredient.  Just enough tart and just enough sweet with the white chocolate chips.

The pudding adds such a great texture.  Give these babies a try, you won’t be disappointed!

Step by step video for you today!  Be sure to follow me on You Tube for more recipe videos this year!

Here’s your ingredient line-up.  Simple pantry items.  You can find lemon curd at most grocery stores by the jams and jellies.  Trader Joe’s carries it too 🙂

  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup prepared lemon curd

  • 1 1/2 cups white chocolate chips

  1. Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
  2. Place butter and sugars into stand mixer and beat until combined. Add eggs and vanilla mixing to combine. Stir in lemon curd and lemon zest.

Hi! My 5-year-old daughter and I made these together this afternoon. They are a hit! I love the lemon flavor and texture of the cookie. They also made my house smell AMAZING today. I *almost* threw some blueberries in a batch to see how that would work, but I decided against it. Any thoughts on that? I think the flavor would work, but I am worried about adding the extra moisture.

It’s awesome at the same time amazing what this hack genius known as CERTIFIED HACKER has made a lot of people to be aware of and exposed to. Partners keep their fingers crossed knowing so well that if someone is going to cheat among them, the other partner if he or she chooses can easily find out and get to know the truth with facts to prove just by simply writing to certifiedhacker4real AT gmail (dot) com for help to find out. So why worry, if you get suspicious you have got a choice. He can help out if need with any hack related service as mobile phone hack, email hack, social media hack (snapchat, facebook, whatsapp, wechat, instagram, twitter etc). I got to find out about my cheating boyfriend after i was provided with facts when his mobile device was hacked into and i was granted access to all his text, facebook and whatsapp messages including all his call logs and deleted messages, i was shocked with what i saw, glad i got to find out the truth all thanks to the hack genius. He is the real deal.

I have made these 4-5 times and I can’t decide which of your recipes I like better- these or the perfect M&M cookies! These are the perfect dessert when I’m craving something sweet without the heaviness of chocolate. These manage to (obviously) be rich, but remain light and satisfying. Thanks for a keeper of a recipe!
